FAVA BEAN SALAD WITH ROASTED-GARLIC VINAIGRETTE
A garlicky fava bean salad brings together the abundant protein and fiber in beans and a slew of antioxidants from corn, cucumber, garlic, and parsley.

Steps:
- Make the vinaigrette: Preheat oven to 350 degrees. Drizzle garlic with 1 teaspoon oil. Wrap in parchment, then in foil. Bake until soft, about 30 minutes. Squeeze garlic from skins. Mash until smooth.
- Whisk together the remaining ingredients with 1 tablespoon of the roasted garlic and remaining 2 teaspoons oil.
- Make the salad: Prepare an ice-water bath. Cook beans in a large pot of boiling water for 2 minutes. Using a slotted spoon, transfer beans to ice-water bath. Let cool completely, and remove with the slotted spoon. Cook corn in same pot for 1 minute, and drain in a colander. Peel thin shells off beans.
- Toss cucumber, onion, parsley, feta, beans, and corn with the vinaigrette.

ROAST CHICKEN WITH FAVA BEANS
Fresh, nutty fava beans brighten this comforting roast chicken skillet dinner.

- Preheat oven to 450 degrees. In an ovenproof skillet, rub chicken with oil and season with salt and pepper. Surround with garlic. Tie legs with twine.
- Roast, basting after 30 minutes, until a thermometer inserted into the thigh reaches 165 degrees, about 1 hour.
- Let chicken stand on a cutting board 15 minutes; reserve garlic and pan juices (skim fat).
- Cook beans in boiling salted water until bright green, 2 minutes. Plunge into an ice bath; peel skins.
- Warm wine in skillet, scraping up brown bits. Add beans, thyme, and garlic; heat through. Stir in pan juices.

- steam beans for five minutes (or presoak dried beans overnight. drain and dunk in cold water to cool slightly
- add all the other ingredients to a bowl to make a thick batter. add the beans and stir to coat.
- spread evenly on a greased baking tin and bake for 35 minutes, turning half way through.
