SOURDOUGH ROSEMARY BREAD

This Italian bread is baked especially for Easter. Fresh rosemary can be lightly browned in olive oil to flavor the oil (then discard the rosemary) instead of using the dry rosemary. Recipe is from the book, "World Sourdoughs From Antiquity" by Ed Wood.

Sourdough Rosemary Bread image

Steps:

  • Measure the starter into a mixing bowl.
  • Add the milk, olive oil, salt, sugar, rosemary, raisins, and 2 beaten eggs and mix well.
  • Add the flour, 1 cup at a time, stirring until it is too stiff to mix by hand.
  • Turn onto a floured surface and knead in remaining flour until dough is satiny.
  • Form an oval or round loaf.
  • Place on a baking sheet and proof, covered, for 1 to 2 hours, or until about doubled in bulk.
  • Preheat oven to 350 degrees F.
  • Make crisscross slash in top of loaf.
  • Brush with the remaining beaten egg.
  • Bake for 45 minutes.
  • Remove loaf from baking sheet and cool on a wire rack.
  • NOTE: This recipe can be made in your bread machine on the dough cycle; add ingredients to machine in order given, with the exception of the final beaten egg.
  • Shape and bake as above.

Rosemary-Parmesan Sourdough Bread image

Steps:

  • Proof starter over night before making bread.
  • To Kitchen Aid mixing bowl add all the ingredients (except toppings).
  • Using dough hook mix until a satin ball is formed (approximately 12-15 minutes); adding additional flour as needed.
  • Remove dough to greased bowl, turning once to coat.
  • Cover and allow to rise until doubled (approximately 1 hour).
  • Form into 1 large or 2 smaller free-form loaves and place on parchment paper or pizza peel dusted with corn meal.
  • Cover and allow bread to rise until double in size.
  • Preheat oven to 375 dgrees.
  • Lightly beat 1 egg white with 1 tablespoon water.
  • Brush top of loaves with egg wash and then sprinkle with fresh parmesan.
  • Bake a 375 deghrees for 30-45 minutes, depending on the size of the loaves.

Almost-Famous Rosemary Bread image

Steps:

  • Stir the yeast, sugar and 1/4 cup warm water in a large bowl (or in the bowl of a stand mixer). Let sit until foamy, about 5 minutes.
  • Add 1 tablespoon olive oil, the flour, 1 1/2 tablespoons rosemary, the fine salt and 3/4 cup warm water; stir with a wooden spoon (or with the dough hook if using a mixer) until a dough forms.
  • Turn the dough out onto a lightly floured surface and knead, dusting lightly with flour if necessary, until smooth and elastic, about 10 minutes. (Or knead with the dough hook on medium-high speed, adding a little flour if the dough sticks to the bowl, about 8 minutes.)
  • Brush a large bowl with olive oil. Add the dough, cover with plastic wrap and let stand at room temperature until more than doubled, about 2 hours.
  • Brush 2 baking sheets with olive oil. Generously flour a work surface; turn the dough out onto the flour and divide into 4 pieces. Working with one piece at a time, sprinkle some flour on the dough, then fold the top and bottom portions into the middle. Fold in the sides to make a free-form square. Use a spatula to turn the dough over, then tuck the corners under to form a ball. Place seam-side down on a prepared baking sheet. Repeat with the remaining dough, putting 2 balls on each baking sheet. Let stand, uncovered, until more than doubled, about 2 hours.
  • Preheat the oven to 400 degrees F. Bake the loaves 10 minutes; brush with the remaining 1 tablespoon olive oil and sprinkle with the kosher salt and the remaining 1/2 tablespoon rosemary. Continue baking until golden brown, about 10 more minutes. Transfer to a rack to cool. Serve with olive oil seasoned with pepper.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a baking tray with cooking spray.
  • Put flour in a bowl. Beat egg in a second bowl. Mix bread crumbs, Parmesan, rosemary, paprika, salt, and pepper in a third bowl.
  • Lightly salt pork chops. Coat both sides in flour, then in egg, then in bread crumb mixture. Place on the prepared baking tray.
  • Bake in the preheated oven until no longer pink in the center, about 20 minutes, turning after 10 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

This bread is a combination of two recipes. One from Williams-Sonoma (which took around 8 hours to rise and didn't turn out so well for me) and an Italian herb bread from s'kat. I like how this version turned out very light and airy and aromatic. I used rosemary from my garden and think the lemon really brings out the flavors. * I threw all of the ingredients in my KitchenAid mixer, gradually adding the flour last. * I let my oven warm at 400 deg. for 1 minute then turned it off and put my covered bread in to rise. This really does the trick!

Rosemary Artisan Bread image

Steps:

  • Mix yeast, warm water and sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
  • Stir in olive oil, lemon, salt, rosemary, garlic, onion, cheese and 3 cups flour into the yeast mixture.
  • Gradually mix in next three cups of flour. (Dough will be stiff). Knead for 5 to 10 minutes, or until it is smooth and elastic.
  • Place in an oiled bowl, turning to cover sides with oil. Cover with a towel, or plastic wrap. Let rise for 1 hour, or until dough has doubled.
  • Punch down to release all the air. Shape into a ball. Place in a greased ceramic stoneware, or into two 9x5 inch, greased pans.
  • Allow to rise for 1/2 hour again, until doubled in a warm place.
  • Bake at 350 degrees for 2 loaves, 30 minutes, for one loaf, 40 minutes.
  • Remove loaves from pans and let cool on wire racks for at least 15 minutes, before slicing.

  • Mix together the poolish ingredients in a large container and let it sit at room temperature for 12 to 14 hours before making the focaccia. It should increase in volume and show bubbles at the surface. Also feed your starter several hours before starting this recipe so that it's at its peak and you have enough to measure out 100g. General rule is to have your starter and poolish double in volume, if not more. You may need to plan ahead so that you can start at your desired time.
  • Set aside the dried rosemary and olive oil. Add the remaining ingredients for the focaccia dough into a stand mixer including the poolish. Make sure the salt and yeast don't touch in the bowl before starting your stand mixer.
  • Mix on low with a dough hook until most of the flour is incorporated. Then add in the olive oil and gradually increase the speed to high speed. (Note: Oil and dough won't mix well together unless you're on high speed.)
