Strawberries in rosé wine image

Steps:

  • Halve any strawberries that are larger than a mouthful. Divide between 4 wine glasses and pour over the wine and cassis. Tuck a mint sprig into each glass. Leave to soak for up to 1 hr, then dust each with icing sugar and serve with crisp biscuits.

Steps:

  • Stir together grapefruit juice and sugar in a pitcher until sugar dissolves. Add wine, raspberries, blackberries, lime slices, and brandy.
  • Cover and chill until ready to serve, 1 to 24 hours.
  • Gently stir in club soda before serving over ice. Garnish with fresh rosemary sprigs.

Red Wine-Raspberry Sorbet image

Steps:

  • In a medium saucepan, bring the sugar, water, and red wine to a boil and let boil for 1 minute, stirring to dissolve the sugar. Remove from the heat and add the raspberries. Cover and let steep for 1 hour.
  • To purée the berries and remove the seeds, using a rubber spatula, press the mixture through a mesh strainer set over a medium bowl or pass it through a food mill fitted with a fine disk into a medium bowl. Cover and refrigerate until thoroughly chilled.
  • Freeze in an ice cream machine according to the manufacturer's instructions.
  • Variation:
  • For a lighter-tasting sorbet, use rosé in place of the red wine.

Great by themselves or with whipped cream or crème fraiche. So easy to make - and they work better if made up to 48 hours beforehand. These berries are stunning if used in trifles or fruit fools! Please adjust the sugar to your personal taste and also according to the sweetness of the fruit.

Rosy Rosé Berries: Strawberries and Raspberries in Wine image

Steps:

  • Pour the bottle of wine into a large bowl - add the sugar, and stir to dissolve.
  • Add the berries and mix thoroughly - but gently as not to bruise them or break them.
  • Cover and store in the fridge for 12 to 48 hours.
  • When you are ready to serve them, spoon the berries into a large wine glass or a parfait/pudding glass or bowl.
  • Pour the sugared wine over the top and serve straight away, with whipped cream or creme fraiche. Ice cream is also good with this dessert.
  • These berries can also be served with shortbreads or cake - and are amazing in trifles!

Steps:

  • Mix the jam and red wine together in a bowl.
  • Wash and hull the berries. Cut the smaller ones in half; quarter the larger ones. Add the berries to the bowl and mix gently but thoroughly.
  • Cover the bowl with plastic wrap, arranging the wrap so it touches the berries and helps keep them submerged in the wine mixture. Refrigerate until cold.
  • Serve the berries and surrounding liquid in wine goblets. If desired, garnish with herb sprigs and serve with cookies.
