RUSSIAN GARLIC SIDE DISH

Believe it or not this can be served as a side salad in a small bowl or mixed with greens. I like to have it as a condiment for your meat course or as an appetizer on crackers with liver pate or other meat. I haven't seen a vampire in my house so it must work!!!

Russian Garlic Side Dish image

Steps:

  • Blanch the garlic in boiling water for 6minutes.
  • Remove and plunge into cold water.
  • Drain well and add remaining ingredients to the garlic, mix well.
  • Marinate in the fridge for 5-7 days before serving.

30 cloves garlic, cleaned & roughly chopped
1/2 cup olive oil
1/4 cup fresh lemon juice
4 tablespoons white wine vinegar
salt and pepper
1/2 tablespoon oregano (optional)

GARLIC PARMESAN SPAGHETTI

This is a fast-to-fix pasta side dish, or change out the pasta shape and it can be transformed into a pasta salad by adding black olives, pepperoni, cubed cheese, etc.

Garlic Parmesan Spaghetti image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, 8 to 10 minutes.
  • Meanwhile, melt butter in a skillet over medium-high heat. Add garlic and cook until fragrant, about 1 minute.
  • Drain spaghetti, reserving 1/2 cup pasta water. Add pasta water and Parmesan cheese to the skillet with the garlic. Stir to combine. Add spaghetti and parsley. Toss to evenly distribute parsley amongst spaghetti and serve immediately.

Steps:

  • Blanch the whole cloves of garlic in boiling water for 5 minutes.
  • Remove and plunge into cold water.
  • Drain.
  • Mix with the remaining ingredients.
  • Allow to marinate for 5 days in the refrigerator before serving.
  • The salad is served as it is, in small bowls alongside the main plate.
  • Or you may chop this up and add it to a layered green salad.
