This is a sauce often used for fish. Spaniards eat a good amount of fish, so this sauce is pretty popular. When you cook fish, make this sauce, and add in the fish pan juices as the very last step of this recipe.

Saffron Sauce for Fish - Spain image

Steps:

  • Dissolve the saffron in heated fish stock that uses white wine and a little vinegar.
  • Make a roux with hlaf the butter (or 1/4 cup) and the flour. Moisten with the stock, adding stock until the consistency is just as thick as whipping cream.
  • Soften the peppers with the garlic in the remaining butter over low heat. When they are soft, add this to the sauce and simmer for 10 minutes.
  • Pour in the cream, Madeira and lemon juice.
  • Add juices from the fish you are cooking to use this sauce with, for maximum flavor and so as not to be wasteful!

1 pint fish stock
1/4 teaspoon saffron thread
1/2 cup butter
1/2 cup flour
1 small red pepper, seeded and cut into strips
1 small green pepper, seeded and cut into strips
1 garlic clove, crushed and chopped
2/3 cup cream
3 tablespoons madeira wine
1 teaspoon lemon juice

HALIBUT FILLETS WITH CREAMY SAFFRON SAUCE

If your experience with saffron is that it fades into the background, you have not been cooking with real saffron. There is no easier way to remedy this than to stir it into an uncooked, yogurt-based sauce in which it plays a leading role. (A touch of mild Aleppo pepper is a fine addition, but a pinch of cayenne - just enough to give a suspicion of its presence - also does nicely.) I like this concoction, which takes just a couple of minutes to prepare, with halibut or other mild fish. The halibut can be lightly poached in butter (you don't need much!) or, if you prefer, steamed or baked with no fat, until just tender.

Halibut Fillets With Creamy Saffron Sauce image

Steps:

  • In a small bowl, whisk yogurt together with salt, pepper, Aleppo pepper or cayenne, and shallot. Rub saffron between your fingers to crush it, then stir it into yogurt mixture. Let sit for about 20 minutes (or covered and refrigerated for up to 2 hours). Just before serving, add juice, taste, and adjust seasoning.
  • Sprinkle halibut with salt and Aleppo pepper or cayenne. Put butter in nonstick skillet large enough to hold halibut, and turn heat to medium. When the butter melts, add fish, and cook gently, turning once or twice, until a thin bladed knife meets little resistance when inserted into the thickest part, generally less than 10 minutes.
  • Serve fish hot, warm, or at room temperature, with the sauce spooned over it.

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; lightly coat with about 1 teaspoon butter.
  • Lay fish in a single layer on the prepared baking sheet.
  • Mix Parmesan cheese, 1/3 cup butter, mayonnaise, green onion, lemon juice, dill, salt, black pepper, and hot sauce together in a bowl.

Almond-crusted fish with saffron sauce image

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Season the fish and spread a little butter over the flesh side of each. Put in a shallow, buttered, ovenproof dish and sprinkle with the flaked almonds, lightly pressing them on. Bake for 12-15 mins until the flesh flakes easily.
  • Meanwhile, make the sauce. Gently fry the shallot with a small knob of butter in a small pan. Add the stock and saffron, bring to the boil, then boil until reduced by about two-thirds. Stir in the crème fraîche and bubble for a minute or so until slightly thickened. Pour a little sauce around each portion of fish. Lovely served with tiny, buttered new potatoes and green beans, or a fresh green salad.

Tagliatelle with Seafood, and Saffron Cream Sauce image

Steps:

  • Scrub all little neck clams in sink to remove any excess dirt or sand.
  • I usually rub the shells gently together against each other, or use a vegetable scrub brush.
  • Peel and devein shrimp.
  • If using lobster, steam (2) 1-1 ½ lb lobsters until shells just turn red.
  • The meat will cook finish cooking in the sauce.
  • Remove tail and claw meat from the shells.
  • I usually cut tails in half or thirds and leave the claws whole.
  • In the meantime, soak the saffron in the white wine.
  • Wine will start to turn reddish orange.
  • Add a little oil and the garlic to a frying pan, and cook until softened.
  • Add the clams (and/or mussels if using), shake pan a bit to coat the shellfish with the oil and garlic.
  • Add the white wine and saffron mixture.
  • Bring to a boil and cook until the shellfish opens, discard any shellfish that remain closed.
  • Then, lay the rest of the seafood, parsley, and the cream on top.
  • Simmer on low for 3 to 4 minutes or until shrimp turn pink.
  • Season with salt and pepper to taste.
  • Cook the tagliatelle in salted, boiling water until al dente.
  • Drain and add to the fish, serve scattered with some of the leftover parsley.

Keep whisking; the sauce will thicken and smooth. Once it does, remove it from the heat and stir in the cream. Taste and adjust salt if necessary, and whisk in chili powder (optional). If the texture is too rich, stir in a bit more milk, a little at a time.
