CHEDDAR CORN BISCUITS

Everyone asks for these cheesy corn biscuits, especially when I serve soup. If you're lucky and have leftovers, rewarm them and pass the butter and jam. -Susan Braun, Swift Current, Saskatchewan

Steps:

  • Preheat oven to 425°. In a large bowl, whisk flour, baking powder, mustard and salt. Cut in butter until mixture resembles coarse crumbs. Add corn, cheese and eggs; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat or roll dough to 1-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on ungreased baking sheets; brush with milk. Bake 18-22 minutes or until golden brown. Serve warm.

Steps:

  • Preheat oven to 450°F. and grease a large baking sheet.
  • Into a bowl sift together flour, baking powder, sugar, baking soda, and salt. Stir in sage and with fingertips blend in butter until mixture resembles meal. Stir in bacon and Cheddar. Add buttermilk and stir until mixture just forms a dough. Gather dough into a ball and on a lightly floured surface knead gently 8 times. Pat out dough into a 6- by 5-inch rectangle. Cut dough into 9 rectangles and arrange about 1 inch apart on baking sheet. Bake biscuits in middle of oven 15 minutes.

Steps:

  • Heat oven to 450°F. Stir 1 3/4 cups Bisquick mix, the cornmeal, 2/3 cup milk and the sage until soft dough forms; beat 30 seconds. Drop by 12 spoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.
  • While biscuits are baking, cook sausage in 2-quart saucepan over medium heat, stirring frequently, until no longer pink; drain. Sprinkle 1/4 cup Bisquick mix over sausage; stir in to blend. Gradually stir in 2 1/4 cups milk until well blended.
  • Cook about 5 minutes, stirring frequently, until thickened. Stir in salt and pepper. Serve biscuits with sausage gravy.

Steps:

  • Preheat oven to 450 degrees. In a food processor, pulse flour, baking powder, baking soda, and salt. Add cheddar and sage and pulse to combine. Add butter and pulse until mixture is the texture of coarse meal, with a few pea-size pieces butter remaining. Add buttermilk and pulse just until combined, 2 to 3 times.
  • Turn dough out onto a lightly floured work surface and knead just until it comes together. With a floured rolling pin, roll dough to a 3/4-inch thickness. With a floured 2 3/4-inch round biscuit cutter, cut out 12 biscuits (reroll and cut scraps).
  • Place biscuits on a baking sheet, 1 1/2 inches apart, and bake until puffed and golden, 12 to 15 minutes. Transfer to a wire rack. Serve warm or at room temperature.

  • In large bowl, whisk together the all purpose flour, cornmeal, baking powder, sugar, salt and cayenne pepper. Add the cubed, cold butter. Using pastry blender, cut in butter until crumbly, with about pea-sized pieces of butter. Add the green onion and shredded cheese and stir to coat with flour. Pour about half of the milk into the bowl and stir in. Begin adding the remaining milk, adding it a bit at a time and stirring between additions, adding only as much milk as is needed until the dough comes together in a moist, but not sticky dough. There should be any dry flour visible in the bowl, especially on the bottom. You may not need all the milk (or you may need a splash more). Just use what you need.
  • Turn the dough out onto floured surface and with lightly floured hands, knead gently a couple of time, then pat into a round about 1-inch thick.
  • Line a baking sheet with parchment paper and sprinkle with a little cornmeal. Transfer the round of dough onto the parchment. Using a sharp knife, cut the round into 8 equal-sized wedges, then use a spatula to move the wedges apart, so there is some space between each wedge. Brush the top of the biscuits with buttermilk or milk and sprinkle with a bit of coarse salt, if using. Bake for 18 to 20 minutes or until golden.
