CANADIAN YELLOW SPLIT PEA SOUP WITH HAM
Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

Steps:
- Place split peas, ham bone, carrots, onion, celery, thyme, bay leaf, salt, and pepper into a large pot; pour in water. Bring mixture to a boil and skim off any foam with a spoon. Reduce heat; place a lid on the pot slightly ajar to allow some evaporation. Simmer, stirring occasionally, until peas are tender and soup is thick, about 3 hours.
- Remove ham bone from soup; strip meat from ham bone, chop meat, and return it to the pot.

SPLIT PEA SOUP WITH HAM HOCKS
Steps:
- In a large saucepan, saute onion, celery and carrots over medium-high heat. Add peas and ham hock and cover with stock by a couple inches. Bring to a simmer and cook about 1 hour until soup is thick and peas have almost disintegrated but not quite. Season, to taste, with salt and pepper. Remove ham hock and let cool. Pull meat from ham hock bone and shred. Garnish with ham and pepper.

- Place all ingredients in a Dutch oven; bring to a boil. Reduce heat; simmer, covered, 1-1/4 to 1-1/2 hours or until peas and vegetables are tender, stirring occasionally.

SPLIT PEA AND HAM SOUP I
This is a good way to use leftover ham, quite inexpensive, and VERY tasty. I hope that you enjoy it. Some people like to add carrots or other types of vegetables. Don't forget to serve with buttered bread toasted in the oven.

Steps:
- In a medium pot, saute onions in oil. Add the split peas, ham bone, and enough water to cover ingredients; season with salt and pepper.
- Cover, and cook until there are no peas left, just a green liquid, 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.
- Once the soup is a green liquid remove from heat, and let stand so it will thicken. Once thickened you may need to heat through to serve.

This split pea soup is a family recipe that I added a few tweaks to. We always make this after Easter with our leftover ham bone. Simple and delicious!

Steps:
- Combine water, 1/2 pound baby carrots, celery, tomato, quartered onion, ham bone, 3 cloves garlic, and bay leaves in a large stockpot. Bring stock to a boil. Reduce heat to medium and simmer for 3 hours.
- Remove 1 1/2 to 2 cups of the ham meat from the bone, dice, and set aside for use in the soup. Pour stock through a strainer and discard solids. Transfer stock to a covered container and refrigerate until fat rises to the top and solidifies, 1 to 3 hours.
- Skim off fat and pour stock into a slow cooker.
- Melt butter in a saucepan and add sliced baby carrots, red onion, and 3 cloves diced garlic. Cook and stir until browned, 7 to 8 minutes. Pour wine into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add to the slow cooker.
- Rinse and drain split peas and add to the slow cooker. Add reserved ham meat, potatoes, sazon seasoning, black pepper, and salt. Stir. Cook on High until soup is thickened, 5 to 6 hours.
- Transfer about 1/3 of the soup to a blender. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Return puree to the slow cooker and stir.

- Melt butter and oil in a Dutch oven over medium-low heat. Add celery, onion, carrot, and salt. Cook and stir until tender, about 5 minutes. Stir in peas and garlic. YELLOW SPLIT PEA SOUP
This is a wonderful recipe for yellow pea soup. You can use about 1/2 pound salt pork, rinsed if covered with salt in place of the smoked ham bone. Just a tip, don't throw away the bone from your cooked ham, wrap tightly in foil and freeze, it is wonderful to use in pea soups, make certain to leave some meat on the bone to shred into the soup. If you have any dried savory, then add in about 1/2 teaspoon to the soup along with the chives. I sometimes add in a couple of potatoes that are cut into small cubes into the soup the last hour of cooking, but that is optional. This soup will take around 2-3 hours to cook.

- Rinse the peas under cold water very well. Pick out any discoloured peas and discard.
- Fill a large pot with water and chicken broth.
- Add in the ham bone or salt pork and half of the onions; bring to a boil (skim off any froth or scume that gathers on top) simmer partially covered until the peas are tender but not falling apart (about 1 - 1-1/2 hours).
- Cook the leeks and the remaining onions in butter in a large skillet over medium heat, stirring until softened (about 10 minutes).

- 1. In a large soup pot, heat olive oil over high heat. Add onions, carrots, garlic, and celery and saute until vegetables begin to brown, about 6 minutes.
- 2. Add ham hocks, chopped ham, bay leaves and water. Bring to a boil then reduce heat and simmer, partially covered, for 2 - 2 1/2 hours or until the ham is very tender.
- 3. Remove the ham hocks and bones. Shred meat into bite-sized pieces and return meat to stock. Discard bones, fat and gristle.
- 4. Add split peas and thyme. Simmer uncovered 1 hour 20 minutes or until peas dissolve and thicken soup.
- 5. Remove bay leaves. Serve with croutons.
- Additional Notes: Soup may be refrigerated for several days or frozen.
- Soup tends to be a bit salty depending on the ham you use. If you have really salty ham you may want to add a potato or two (chopped into bite size pieces) about an hour before the soup is finished.
- I use playtex gloves for handling the hot ham bones and shredding the meat so I don't have to wait for it to cool down.
- My family dislikes onions and celery so I leave the pieces particularly large and remove them when I remove the ham bones.

- Fry the bacon in your soup pot and reserve for garnish.
- Add the olive oil to the rendered bacon fat.
- Add chopped onions and carrots. Cook & stir for 10-15 minutes.
- Push to one side of the pot to make a hot spot.
- Drop the red pepper flakes and garlic into the spot.
- Cook the garlic/pepper a minute in that spot.until golden.
- Add the bay leaf, split peas, ham, broth, water and bring to a boil.
- Cover the soup and let it simmer for 60 minutes.
- Remove the bay leaf and add the half and half.
- The peas, onions and carrots should cooked enough to make the soup thick and vegetables indistinct, if not - use a hand blender -- but you'll lose the lovely ham cubes if you're too vigorous.
