SALSA WRAPS (SANDWICH OR APPETIZER)
This is a wonderful twist on the generic cream cheese/ tortilla pinwheels that are served at lots of parties. You can slice these into pinwheels for an appetizer, or eat a whole tortilla as a sandwich. Green onions are another nice addition. I often leave out the ham and add more cheddar cheese-- either way, these are delicious!

Steps:
- Combine cream cheese, sour cream, dressing mix, salsa and cheddar cheese in a medium sized bowl.
- Spread even amounts of this mixture onto tortillas, and top with a slice of ham.
- Roll tortillas and chill until serving time.
- If desired, cut into 1" slices before serving. If serving whole, a toothpick may be needed to keep the wrap together.

- Spread Black Bean-Smoked Chile Dip on one side of each tortilla. Top with chicken, romaine, cilantro, and salsa. Roll up tortillas. If desired, secure with toothpicks.
- Black Bean-Smoked Chile Dip: In a small saucepan, heat 1 tablespoon canola oil over medium heat. Add 3/4 cup finely chopped onion, 1 teaspoon ground coriander, and 1 teaspoon ground cumin; cover and cook about 10 minutes or until very tender, stirring occasionally. Remove from heat; stir in 1/4 cup snipped fresh cilantro. Transfer onion mixture to a blender or food processor. Add one 15-ounce can Progresso® black beans, rinsed and drained; 1/2 cup water; 1 tablespoon lime juice; 1 teaspoon finely chopped chipotle chile pepper in adobo sauce; and 1/8 teaspoon salt. Cover and blend or process until nearly smooth. Serve immediately, or cover and chill for up to 3 days. Makes 1 2/3 cups.

- Warm each tortilla according to package directions: I just wrap them in a paper towel and microwave for 20 seconds.
- In a small bowl, combine the first 5 ingredients in the order given, mixing well to create a "tuna salsa" mix.
- Lay each one of the warmed tortillas on a cutting board. In the center of each tortilla, place an equal portion of the shredded lettuce, tuna mixture and top each with a pinch of shredded cheese.
- Fold the long end of the tortilla over the ingredients, roll tightly and enjoy.
