FRESH HOMEMADE SALSA
Another salsa recipe called for a fresh jalapeno (I think), but I had green chiles in a can on hand. This salsa tastes great, so I'm sticking with it!

Steps:
- Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

SALSA BORRACHA

Steps:
- Cook the chiles in a dry saute pan over high heat turning constantly until slightly toasted, about 2 minutes. Remove from the heat and when cool enough to handle, cut them in half and remove the seeds. Tear them into small pieces and add them to a blender.
- Add the orange juice, tequila, garlic and olive oil to the blender. Puree the salsa and add it to the same saute pan used to toast the chiles. Cook until slightly thickened, about 5 minutes. Season the salsa with salt and freshly ground black pepper. Cool completely. Transfer to a serving bowl and top with crumbled anejo cheese.
FISH TACOS WITH FRESH SALSA

- Make the salsa: Mix the tomatillo, tomato, onion, cilantro, lime juice and jalapeno in a bowl and season with salt.
- Heat 1/2 inch vegetable oil in a deep skillet or pot over medium-high heat. Season the fish with 1/2 teaspoon salt and 1/4 teaspoon pepper, then toss with the flour in a bowl. Fry the fish in 2 batches, turning as needed, until golden brown and just cooked through, 3 to 4 minutes per batch. Transfer to a paper towel-lined plate to drain; season with salt.
- Fill the tortillas with the fish, lettuce and salsa. Serve the tacos with lime wedges.

Just the name cracks me up! This is a great salsa! It might seem unusual for you but serve this warm! It is a great change of pace! This is also great on top of tacos or enchiladas or anything!

- Melt butter over medium low heat in a saucepan. Add the garlic, chili powder, and jalapenos and saute.

This is a special salsa that you can serve with Mexican tacos, fajitas, chicken or over eggs. I am from Mexico and we love it !!!. Viva Mexico! Leave the seeds in the peppers for a spicier salsa.

- Place the tomatoes and jalapenos into a saucepan, and pour the beer over them. Add enough water so that the tomatoes and jalapenos are covered. Simmer over medium heat until soft. Remove from heat, and let cool slightly.
- Transfer the tomatoes and jalapenos to a blender, and add the garlic and onion. Pulse until well blended. Add some of the cooking liquid to help with blending if necessary. Taste, and season with salt.

EASY COOKED SALSA
I've experimented with a lot of salsa recipes and this is, by far, my favourite. It doesn't take too long to make (especially if you have a food processor to do the chopping) and is just right for spice -- a little kick but not so much that your tongue falls off!

- In a large pot, heat the oil and add the jalapenos, sweet peppers, garlic and onion.
- Sauté until everything is soft but not browned.
- Add the tomatoes and cook until the tomatoes are quite soft and starting to pack down in the pot, about 5 minutes.
- Add the remaining ingredients and cook for about 10 minutes more to give the flavours a chance to mix together and the water to boil off.
- When the salsa is as thick as you like it, add salt to taste if needed and let stand for at least one minute.
- Stir well before serving.

This is a recipe I just throw together, but it is very popular. Serve with tortilla chips.

- In a medium-size mixing bowl, combine tomatoes, onion, cilantro, garlic, lime juice, tomatillo, and salt to taste. Mix well. Add 1/2 of the jalapeno pepper, and taste. - Using a blender or food processor, add equal amounts of each vegetable and using pulse, process just until it is still chunky.
- Drain, reserving liquid.
- Repeat until all vegetables have been processed.
- Mix drained salsa, adding sugar, cilantro and salt. Add some of drained liquid to make it desired thickness.
- If it is too spicy, add more tomatoes.
- Refrigerate in glass container and use on tortilla chips, tacos, scrambled eggs, or as a relish.
- Will keep for up to one week.

- Place roma (plum) tomatoes and serrano peppers in a medium saucepan over medium high heat with enough water to cover. Bring to a boil. Boil 15 minutes. Remove from heat and drain.

SALSA BY RICK BAYLESS
I once saw Rick Bayless make this salsa on his TV show. It doesn't take long to make and the individual ingredients can be increased or decreased depending on taste.

Steps:
- In a food processor put the green chili and the garlic clove and mince.
- Roughly chop two of the tomatoes and add to the food processor along with the cilantro. Pulse 7-8 times.
- I next usually remove the top of the food processor and use a spoon to push down any of the ingredients that have gone up the side of the food processor. Put the top back on and pulse a few more times or until you have the desired consistancy.
- Pour the ingredients into a serving bowl.
- Finely chop the remaining two tomatoes and add the tomatoes and green onions to the serving bowl.
- Add 1-3 teaspoons lime juice or vinegar and a generous amount of salt. Stir until everything is well blended.
- Let the salsa marry in the fridge for about an hour if desired, before serving.
- The cooking time is the chilling time in the fridge.
