A wonderful salad with a homemade dressing to pour over at time of serving. Everybody likes this!

Steps:
- In a blender or food processor, combine sugar, vinegar, oil, Worcestershire sauce, ketchup and onion, and process until smooth. Set aside.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- In a large bowl, toss together the spinach, water chestnuts, bacon and eggs. Serve with the dressing.

- Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
- In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

- Melt butter in a small saute pan over medium heat and add the sugar. Stir until sugar is melted and remove from heat. Stir in the pecans and transfer the mixture to a baking sheet. Bake for about 5 minutes until toasted. Lay the prosciutto slices on another baking sheet and bake for 2 to 3 minutes until the prosciutto is crispy. In a large salad bowl, place the spinach, candied pecans, cranberries, and prosciutto. Toss with the dressing and garnish with crumbled feta.

- Place the eggs in a saucepan, cover with water and bring to a boil. Then turn off the heat and allow to sit in the water for 20 minutes. Drain off the water and add ice on top of the eggs.
- Fry the bacon in a skillet until crispy/chewy. Remove to a paper towel. Drain the fat into a bowl and reserve. Give the skillet a wipe with kitchen paper.
- Slice the red onion very thinly, and then add to the skillet. Cook slowly until the onions are caramelized and reduced. Remove to a plate and set aside.
- Slice the mushrooms and add them to the same skillet with a little of the reserved bacon fat if needed. Cook slowly until caramelized and brown. Remove to a plate and set aside. Chop the bacon. Peel and slice the eggs.
- Make the hot bacon dressing:
- Add 3 tablespoons of the reserved bacon fat, vinegar, sugar, Dijon and salt to a small saucepan or skillet over medium-low heat. Whisk together and heat thoroughly until bubbly. Add the spinach to a large bowl. Arrange the onions, mushrooms and bacon on top. Pour the hot dressing over the top; toss to combine. Arrange the eggs over the top and serve.

- These are the"crispies" and will keep in a baggie in the freezer if you have any leftover.

- Heat oil in a skillet and sautee the bacon until the pieces are golden brown. Remove from the heat.
- Mix spinach, mushrooms and onion in a glass or ceramic bowl. (Do not use wood - it will soak up the warm dressing.)
- Toss salad ingredients with the vinegar.
- Reheat the bacon and drippings in the skillet and pour over salad. Toss thoroughly then cover the salad with the overturned skillet for about 30 seconds. Toss again.
- Season with pepper, crumble sieved hard-cooked egg yolk on the salad and serve.
TWO GRAIN SPINACH TOSS
Always trying to eat more healthy grains. Well, I like lentils, but I LOVE quinoa! So here is my try at combining them together. I had a large jar of toasted quinoa that I figured was ready to be used up.....so here is something that I put together to stuff some big beef tomatoes that I had. I think this would be great in pita bread also. Maybe some blanched yellow peppers? I have put the servings as if you would stuff four beef tomatoes, so how many servings will depend on how you use it. BTW, leaving out the pine nuts will bring down the fat content greatly. You can try 1/2 cup toasted almonds in its place.

- Spray the inside of a large pot with cooking spray. Use generously.
- Heat pot over medium heat. Add onions to pot and saute about 5 minutes.
- Add garlic and mustard seeds. Stir while seeds heat.
- When seeds begin to make popping sounds, add the grains and mushrooms. Stir.
- Add vegetable broth and 1//2 water.
- Cover pot and simmer for 20 minutes.
- Uncover, stir and taste for texture. If too dry, add the 2nd half of water, cover and simmer another 5 minutes.
- Remove from heat and let stand, covered, for five minutes.
- Fold in spinach and pine nuts, if using. Add salt and pepper as desired.
- Allow to stand covered about 5 minutes until spinach is wilted.
- Fluff. It's now ready to use as suggested -- or -- use as you wish!
