CHICKEN SCARPARIELLO

- Heat a large, heavy skillet over medium high heat. Cut chicken into large chunks and season with salt and pepper and poultry seasoning. Add 1 tablespoon extra-virgin oil to the hot pan, 1 turn in a slow stream. Set chicken into pan and do not turn for 2 or 3 minutes or you will tear the meat. Brown chicken 3 minutes on each side and then remove all of the chicken to a warm plate. Add bell peppers, hot peppers and garlic to the pan. Saute the peppers and garlic for 5 minutes, tossing and turning them frequently. Add wine to the pan and reduce 1 minute. Scrape up the pan drippings. Add the chicken stock and bring it up to a bubble. Set the chicken back into the pan. Toss the parsley with the chicken and peppers and cook the chicken through, 2 or 3 minutes. Scatter a little hot pepper juice over the pan and serve the Scarpariello over a bed of lemon orzo. WOW!
- Cook orzo in salted water about 12 minutes, to al dente. Drain orzo well. Do not run under cold water. You want the cooked pasta to remain hot. Transfer pasta to a serving bowl. Drizzle orzo with a tablespoon of extra virgin olive oil and season with salt and pepper. Add lemon zest and parsley and toss to combine the flavors with the pasta.
JAMAICAN STYLE CURRY CHICKEN
This is a recipe that I have put together over some various websites, verbal consultations and just experimenting on my own and with my family. Rich and hearty with a great flavor when you can't get the real thing in the islands. Try a variety of hot peppers to change the flavor - even sweet bell peppers give a different taste. Use fresh thyme to really bring out the fresh taste.

- Heat vegetable oil in a skillet over medium-high heat; cook and stir onion, tomato, garlic, curry powder, habanero pepper, and thyme until onion is golden, about 7 minutes. Stir in chicken and cook until chicken is lightly browned, about 5 minutes.
- Pour water into the skillet, reduce heat to low; cover and simmer until chicken is no longer pink at the center, about 30 minutes. Season with salt.

- Rinse the chickens with water and pat them dry with paper towels. Cut the chickens into serving pieces and place in a large bowl, reserving the backs, necks, and wing tips for stock or another use. Juice the limes and add the juice to the chicken along with the grated lime rind, coating the chicken with the juice.
- In a large skillet, heat 1/4 cup of the oil and 1 tablespoon of the butter, if using, over high heat until very hot. Pat the chicken dry again and carefully add half of the pieces to the skillet. Fry on one side for 3 to 4 minutes, shaking and tilting the skillet a little to distribute the fat. Turn the chicken over and fry for 3 minutes more, or until golden brown. Remove the chicken to a large platter and set aside.
- Pour out the old fat, wipe the skillet, and add the remaining 1/4 cup oil and 1 tablespoon butter, if using. Repeat the frying procedure with the remaining chicken pieces and then set aside.
- Discard all but 2 tablespoons of oil, reduce the heat to medium, and add the onions and garlic to the skillet. Cook, stirring, for 1 minute (be careful not to burn the garlic). Add the curry powder and fry for 1 minute, scraping the bottom.
- Add the tomatoes, whole Scotch bonnet pepper and slices, salt, and black pepper. Stir thoroughly while scraping the bottom of the pan. Add the water and mix until well blended. Return the chicken to the pan. Bring to a boil and reduce the heat to a simmer. Cover and cook for 45 minutes, or until the chicken is tender.
SARASOTA'S SIMPLE CREAMY CURRY CROCK POT CHICKEN
Now, I am not the biggest crock pot fan ... but now and then, it definitely comes in handy. Also, I am not a huge curry fan either, but my girl friend made this a few weeks ago and we had some leftovers for lunch which were great. I now have the recipe, but can't take credit, other than I would add some onion and fresh herbs, and serve over rice, but otherwise ... it is a simple seven (7) ingredient dish. It is inexpensive and easy and a couple of simple sides like rice and maybe some roasted green beans or broccoli make this a very nice weeknight dinner. One suggestion ... I really think that a pan saute of the chicken prior to adding it tot the crock pot really adds a lot of flavor. You can pan sear the night before and add to your crock pot. Then in the am ... simply add the onion, salsa and curry and turn to on. Easy and delish.

- Chicken -- In a large saute pan on medium high to high heat, add the oil and saute the chicken until lightly golden brown on each side. Don't over cook, you are just getting a light sear on the chicken. Remove from the pan and let cool.
- Crock Pot -- Once cool, add to the crock pot. NOTE: If doing this step the night before, just add to the crock pot along with the cut onions in a baggie, put the lid on and put in the refrigerator until the am. It saves time so you don't have to sear the chicken in the morning.
- If not, after you add the chicken, finish by mixing the curry powder and garlic right into the jar of salsa and pour that and the water right over the chicken. Add in the sliced onion and put on the lid.
- Cook -- 6-8 hours on low. As we know, newer crock pots tend to cook hotter, and also the size and style matters as well. My oval takes 6 hours, 7 for my round one. However is you don't do the pan searing step, they may take longer and especially if you buy bone inches But I think 6 hours is a good starting time to check them.
- Finish -- One the chicken is done. Remove from the heat to a plate and cover with foil. Add the sour cream and parsley to the salsa for a nice creamy sauce. Just stir to combine, it will heat up in just minutes.
- Serve -- I prefer to serve this over rice and maybe garnish with some diced scallions. This really is a nice easy dish with great flavor. ENJOY!

CARA'S SWEET AND SOUR CROCK POT CHICKEN
My friend Cara shared this family recipe with me - it's been a favorite on their table for years, and often requested. :) Prep time includes chilling.

Steps:
- Trim the chicken of fat and gristle, then cut the breasts or thighs into thirds.
- Sprinkle both sides of the chicken pieces with garlic salt; place into container and let stand in the fridge for an hour.
- Preheat your crock pot on low.
- Take the chicken from the fridge; put cornstarch and beaten eggs in separate shallow pans or dishes.
- Dredge the chicken pieces in the corn starch, then the egg.
- In a large skillet over medium temperature, heat the oil; slowly cook the dredged chicken pieces, frying to a golden brown on both sides, about 6 to 7 minutes per side.
- Remove the chicken from the skillet and place in the crock pot.
- In a saucepan over medium heat, combine the sugar (or sugar substitute*), vinegar, chicken stock, salt, catsup, and soy sauce; simmer, stirring occasionally, until sugar has dissolved and ingredients have incorporated well.
- Pour the sauce over the cooked chicken in the crock pot.
- Cook on low for 4 hours, then serve with rice and enjoy!
- *Note:if you use granular Splenda or Splenda Sugar Blend, you might want to use a bit less than 1/4 cup, then prepare the sauce to taste to make sure that it comes to the sweetness you prefer.
- Julie notes: I'd make some slight additions to the sauce, such as about a 1/2 teaspoon minced garlic and some chopped scallions; also, if you use chicken broth instead of stock, use unsalted broth then season with salt and/or soy sauce to taste.
