  • 1.Spray a grill grate with cooking spray or brush with oil.
  • 2.Heat a gas or charcoal grill.
  • 3.Brush the top of the salmon with the olive oil; sprinkle with the salt and pepper.

Steps:

  • Preheat oven to 375 degrees F. Preheat a grill to high heat.
  • To make the fish: fillet the fish and remove all bones (You can ask your fishmonger to do this). Season the fish with the olive oil, and salt and pepper. Grill on both sides until the fish has clear grill marks, about 6 minutes per side. Remove from the grill, place on a sheet pan, and finish in the oven.
  • Transfer to a warmed platter and brush with Herbed Butter Sauce.
  • To make the sauce: in a small pan, sweat the shallots in butter. Add the wine, stock, vinegar, and lemon juice and simmer until reduced by half.
  • Stir in 3 tablespoons cream. Add half of the tarragon. Whisk in the cold butter, 1 tablespoon at a time, strain and add remaining tarragon and chopped parsley. Season with salt and pepper to taste.
  • Reserve warm.

  • Heat a medium size saucepan, over medium heat.
  • Add canola oil and saute garlic, ginger, and green onion until fragrant and tender. Add the red pepper flakes. Mix the remaining ingredients in a separate bowl and add to the saucepan. Bring to a low simmer and cook for 10 minutes.
  • Preheat grill to medium-high heat.
  • Lightly season the salmon steaks with salt and pepper. Oil the grill with vegetable oil. Place the fish down for 4 to 5 minutes. Flip the fish over and brush with the barbecue sauce, continue cooking for another 4 to 5 minutes, until opaque throughout. Divide the baby spinach among 4 plates. Place the salmon steaks on top of the beds of spinach while still very hot. This will make the spinach wilt.

Steps:

  • Whisk together the mustards, honey, horseradish, mint and 1/4 teaspoon of salt and 1/4 teaspoon of pepper in a small bowl. Let sit for at least 15 minutes before using. Can be made 1 day in advance and refrigerated but do not add the mint until just before using. Bring to room temperature before using.
  • Heat the grill to high.
  • Brush the salmon with the oil and season with salt and pepper. Place the salmon on the grill, skin side down, and grill until golden brown and slightly charred, about 3 minutes.
  • While the salmon is cooking, place the watercress and onion in a medium bowl, add the vinegar and oil and salt and pepper and toss to combine. Transfer the salad to a platter, top with the salmon fillet and drizzle each fillet with the mustard sauce.

This dish is more flavourful than hot so don't be afraid of it. Serve it with rice, asparagus or broccoli and a crusty baquette. You can find the ingrediants with the soy sauce in the Asian Specialty section at the grocer. They come in small jars. My favourite hot chili paste is Sombel Oelek - no sugars added.

  • Spray broiler rack with nonstick cooking spray. Preheat Broiler.
  • Finely chop enough green onions to measure 1/4 cup; set aside.
  • Rinse salmon and pat dry with paper towels. Place in shallow glass dish.
  • Combine green onions, black bean sauce, hot chili paste, soy sauce (don't use a sweet soy sauce), sesame oil, garlic and pepper in a small bowl; mix well.
