FUDGE COOKIES
This is one of the few recipes of my mom's that I have in her own handwriting. My husband was scarfing these one Christmas at my parents's house, so she sent home the recipe. She states this makes 5 dozen cookies, but she made them bigger, so got about 30.

Steps:
- Melt chocolate and butter in a saucepan.
- Remove from heat.
- Add milk and mix well.
- Add flour and salt and mix well.
- Add nuts, remaining chips,and vanilla.
- Drop by 2 tsps or whatever size you want,on greased cookie sheets.
- Bake at 325* for about 12 minutes.
COOKIE BUTTER FUDGE

Steps:
- Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides; lightly coat the foil with cooking spray. Bring 1 inch of water to a simmer in a medium saucepan over medium heat.
- Combine the white chocolate, cookie butter and salt in a large heatproof bowl and set it over the saucepan (do not let the bowl touch the water). Cook, stirring frequently, until the mixture is completely melted and smooth. (Reduce the heat if steam sputters around the bowl - you want to prevent any water from getting in the chocolate and causing it to seize.)
- Remove the bowl from the pan and stir in the molasses. Wipe the water from the bottom of the bowl, then pour the mixture into the prepared baking dish. Spread evenly with a rubber spatula and top with white nonpareils. Let set at room temperature, 1 to 2 hours. Cover with plastic wrap and refrigerate until chilled but not hard, about 30 minutes.
- Lift the fudge out of the baking dish and peel off the foil. Cut into 1-inch squares with a sharp knife. (If the fudge is too hard or starts to crack when cut, let soften slightly at room temperature, 10 to 20 minutes.)
CHOCOLATE FUDGE COOKIES

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, stir together the cake mix, eggs and oil until well blended. Fold in the chocolate chips. Roll the dough into walnut sized balls. Place the cookies 2 inches apart on the cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- In a heavy saucepan over low heat, stir butter and chocolate until melted adn smooth; cool.
- Stir in sugar, eggs vanilla (and nuts) until well blended.
- Stir in the rest of the dry ingredients until well blended. Cover and chill about 2 hours.
- Preheat oven to 300.
- Roll in 1 1/2 inch balls, and then roll in confectioner's sugar.
- Place 2" apart on ungreased cookie sheets. Bake for 20 minutes or until crackled on top.
- Immediately remove to rack to cool.

This recipe is one that my Mother-in-Law gave me - and we have enjoyed them for such a long time. I had misplaced the recipe for a while and have just recently found it again, hidden away in a cookbook that I seldom use so I thought I'd share it with you -

- In a meduim saucepan, mix together butter, sugar, eggs, salt, dates and walnuts. Cook over low heat for 10 minutes. Remove from heat and add vanilla.
- Cool for about 5 minutes and then fold in 2 cups rice krispies.
- Form into balls and roll in coconut.

- In a microwave safe bowl, add butter and 1/2 of the chocolate chips or chunks. Microwave in 30 second intervals until everything is melted.
- In a large bowl, add eggs, white sugar, brown sugar and vanilla extract. Mix with a hand mixer or stand mixer until fully incorporated. Then add chocolate mixture and continue to mix together.
