Sausage and Cheese Balls image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine pork sausage, Italian sausage, pork rinds, and mozzarella cheese in a bowl. Mix well and form into about 48 equal-sized meatballs. Arrange meatballs in a shallow baking pan.
  • Bake in the preheated oven meatballs are nicely browned and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 20 minutes.

Steps:

  • I use Tennesse Pride HOT sausage for a little kick. You can use whichever you like.
  • Place all the ingredients in a large mixing bowl and use your hands to mix them together. I add salt and pepper in moderation, more pepper than salt.
  • Once mix is all combined, form into 1 - 1 1/2 inch balls and place on cookie sheet. Bake for 10-12 minutes at 350 degrees, or until cheese has melted a bit out of the balls and onto the sheet.
  • Remove from sheet and drain. Makes about 50 balls.

Steps:

  • Mix all the ingredients together until thoroughly blended (it is best to use your hands or an electric mixer).
  • Form into about 4 dozen 1 to 1 1/2 inch balls and place on a cookie sheet or broiler pan.
  • Bake at 375°F for about 25 minutes.
  • Once they are cool, they can be sorted into individual zip bags and frozen for a grab-and-go breakfast.
  • NOTE: for Scotch Eggs, mold a bit of the raw meat mixture around a peeled hard-boiled egg (or eggs) and bake at 350°F for 30 minutes.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine sausage, cream cheese, Cheddar cheese, Parmesan cheese, mustard, garlic powder, and salt in a large bowl. Mix gently until just combined. Roll heaping tablespoonfuls of the pork mixture into balls. Place on the prepared baking sheet.
  • Bake in the preheated oven until golden brown, 30 to 35 minutes. Place on a paper towel-lined plate to soak up excess grease. Serve immediately.
