SAUSAGE & LENTIL TRAYBAKE

Maple syrup adds a subtle sweetness to this earthy one-pan supper, and it couldn't be easier to make

Sausage & lentil traybake image

Steps:

  • Heat oven to 200C/180C fan/gas 6. Quarter the onions, leaving the root intact so they don't fall apart during cooking. Heat a griddle pan to high. Griddle the onions to char them, then remove and set aside. Repeat with the sausages - you don't need to cook them through at this point, just brown them.
  • Tip the lentils into a roasting tin and add any juices from the griddle pan, the vinegar and some seasoning, then toss together. Arrange the onion wedges and sausages on top. Brush the sausages and onions with the maple syrup, and season the onions. Cook for 20 mins, then serve.

A simple dish with a distinct flavor that will leave you craving more. Lentils are cooked with Polish sausage and cumin to make a fast and satisfying meal that is ready in under 30 minutes with minimal effort. Use any type of sausage - I have used bratwurst, chorizo and leftover hot links as well.

Steps:

  • Combine water, lentils and onion in a saucepan over medium heat. Bring to a boil, and cook for about 15 minutes. Add sliced sausage, and season with cumin, salt and pepper. Simmer until lentils are tender, about 5 to 10 more minutes.

Sausage, roasted veg & puy lentil one-pot image

Steps:

  • Heat grill to high. Put the sausages in a large roasting tin and grill for 8-10 mins until browning, then switch the oven on to 200C/180C fan/gas 6. Remove the tin from the oven and add the vegetables and garlic, then drizzle over the oil and toss in the paprika and some seasoning.
  • Roast for 30-35 mins more until the sausages and veg are mostly tender, then stir through the lentils and vinegar. Return to the oven for 5 mins until everything is heated through. Squeeze the garlic cloves out of their skins and stir the garlic into the lentils, then season to taste, stir through the parsley and serve.
