ITALIAN SAUSAGE AND VEGETABLE PASTA
How about Italian for dinner tonight? This one-dish meal of ziti, spicy sausage and Muir Glen® fire roasted tomatoes can be on the table in short order.

Steps:
- Cook pasta as directed on package, adding broccoli last 2 minutes of cooking time. Drain and return to saucepan; cover to keep warm.
- Meanwhile, in 12-inch nonstick skillet, cook sausage over medium-high heat 8 to 10 minutes or until no longer pink. Drain; remove sausage from skillet.
- In same skillet, heat oil over medium heat. Cook bell peppers and onion in oil 3 to 4 minutes, stirring constantly, until vegetables are crisp-tender.
- Add pasta and broccoli, sausage and tomatoes to skillet. Heat to boiling; reduce heat. Simmer uncovered 4 to 5 minutes, stirring occasionally. Sprinkle with cheese. Cover; cook 1 to 2 minutes or until cheese is melted.

SAUSAGE AND ROASTED VEGETABLE PENNE

- Preheat the oven to 400 degrees F.
- In a bowl, toss all the vegetables, except the tomatoes, with 1 1/2 tablespoons oil. Season with salt and pepper, to taste. Arrange on a baking sheet and roast, until caramelized, about 30 minutes, turning vegetables halfway through the cooking time. In a small bowl, add the tomatoes and the remaining olive oil and toss to coat. Season with salt and pepper, to taste, and add to the baking sheet, at the halfway point of cooking, to caramelize.
- Meanwhile, in a large skillet over medium heat, add the sausage and saute until cooked through. Turn up the heat and deglaze with white wine. Once the vegetables are cooked, cool slightly, then coarsely chop. Add the vegetables and any pan juices to the sausage in the skillet. Toss in the cooked penne, adding reserved pasta water, if needed, to moisten. Season with salt and pepper, to taste, and serve in bowls topped with Parmesan.
GRILLED ITALIAN SAUSAGES WITH PASTA AND VEGETABLES

- Heat coals or gas grill for direct heat. Grill sausages 4 to 6 inches from medium heat 15 to 20 minutes, turning frequently, until no longer pink in center.
- Brush bell pepper pieces with about 2 tablespoons of the dressing. Add to grill for last 10 minutes of cooking time, turning frequently, until crisp-tender.
- Meanwhile, cook and drain pasta as directed on package.
- Cut sausages into 1/2-inch slices; cut bell peppers into 1 1/2-inch pieces. Toss pasta, sausages, bell peppers, tomatoes and remaining dressing. Sprinkle with basil.

- Bring a large pot of water to a boil, add 1 to 2 tablespoons of salt to the water, and cook the pasta until it's al dente. Before draining the pasta, reserve 1/2 cup of the pasta water.
- Meanwhile break apart the sausage into small pieces and cook in 1 tablespoon of oil in a large saute pan until nicely browned (about 10 minutes or so).
- While the pasta is cooking and sausage is browning, rinse your broccoli florets and halve any of the tomatoes that are especially large.
- Once the sausage has browned, add the broccoli and garlic to the pan, stir to combine everything and then reduce the heat, cover the pan and let cook for about 5 minutes.

- In a large skillet, heat 1 tablespoon of olive oil and add sausage. Cook, occasionally stirring, until it's cooked through, drain the fat. Add another tablespoon of olive oil into the skillet with sausage, add chopped onion and garlic, half of the Cajun seasoning - cook, constantly stirring, on high heat until onion softens.
- Add chopped bell peppers, tomatoes, mushrooms, and the remaining half of Cajun seasoning to the skillet with sausage. Cook for about 2 minutes, constantly stirring, on medium-high heat to sear the vegetables nicely on stove-top.
- Add wine to the skillet, bring to boil, reduce to simmer and simmer, covered, occasionally stirring, for about 5-7 minutes. The liquid should reduce somewhat but not completely. Remove from heat. Salt to taste. Add more Cajun seasoning, if necessary.
