ITALIAN SAUSAGE AND PEPPERS STIR FRY

You can cook it with hot Italian sausages as in the directions below or you can make it with mild or sweet sausages. If you do, you may want to omit the peppers and add either a touch of honey, syrup, or brown sugar, and sliced tart apples . Either way, I think I'd keep the onions...but that's a personal choice. You can also add chili flakes or parsley or any herb/spice that suits your tastes. If you want to serve it over pasta, you can add a can or two of spaghetti sauce and slice the sausauges before frying. This recipe is so versatile, you can't go wrong.

Steps:

  • Heat olive oil in a large frying pan.
  • Add onions and garlic and fry till golden brown.
  • Add sausages and cook till almost done.
  • Add peppers and seasoning.

Steps:

  • Use a roasting pan large enough to hold all ingredients.
  • Clean peppers, cut into strips& place in the pan.
  • Cut sausage into 1 1/2 slices& put on top of the peppers.
  • Pour the tomatoes over them.
  • Sprinkle the oil and the rest of the ingredients over all.
  • Preheat oven to 375 degrees F.
  • Bake about an hour, stirring several times during the cooking.
  • Serve in a dish or better yet, in sandwiches with crusty Italian bread or rolls.

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

Grilled Sausage and Peppers Sandwiches image

Steps:

  • Prepare a grill for medium-high heat.
  • Mix the balsamic vinegar, garlic, 1/2 teaspoon Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper in a large bowl. Whisking constantly, slowly drizzle in 2 tablespoons olive oil until emulsified. Add the red pepper, green pepper, serrano pepper, onion, 1/2 teaspoon salt and a few grinds of black pepper and toss until well combined.
  • Place the basket on a baking sheet and transfer the peppers and onions to the center, letting any extra marinade drip off. Place 3 links of sausage on either side of the veggies. Close and secure the basket.
  • Place the grill basket on the grill and cook, flipping once, until the vegetables and sausages start to brown and caramelize and an instant read thermometer inserted into a sausage measures 160 degrees F, 10 to 12 minutes.
  • Meanwhile, mix the remaining 3 tablespoons oil, remaining 1 teaspoon Italian seasoning, 1/4 teaspoon salt and a few grinds of black pepper in a small bowl. Open the hoagie rolls and brush the insides with the herb oil. Grill until toasted, about 1 minute.
  • Remove to a platter and place 2 overlapping slices provolone on each roll (do not allow cheese to hang over the sides). Return the rolls to the grill, cover, and cook until the cheese is melted, about 1 minute. Remove to a platter.
  • Remove the peppers and onions from the basket and slice thinly. Cut each link of sausage in half on a deep bias and place in a hoagie roll. Divide the peppers and onions among the rolls and spoon 2 tablespoons warm marinara on top. Serve the hoagies with the remaining marinara on the side for dipping.

  • Preheat a grill to medium heat.
  • Pour the olive oil into a large skillet over a medium-high heat. When the oil is hot, add the bell pepper and onion, then sprinkle with a pinch each of salt and pepper. Cook, stirring frequently, until lightly browned and just tender, 8 to 10 minutes. Add the garlic and cook until just softened, about 1 more minute. Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment paper. Place the onions on the prepared baking sheet and toss with 1 tablespoon olive oil and some salt and pepper. Spread the onions in an even layer and roast for 5 minutes. Remove the pan from the oven and push the onions over to one side.
  • Toss the orange and green bell peppers in a medium bowl with the remaining tablespoon olive oil and some salt and pepper. Place the seasoned peppers in the center of the baking sheet. Place the sausages in the empty area next to the peppers, spacing them evenly apart.
  • Roast until the onions are translucent and tender, the peppers are soft and charred in spots, and the sausage is completely cooked through, about 25 minutes. (For even cooking, turn the vegetables halfway through cooking.)
  • Cut the sausages into bite-size pieces and divide evenly between four hoagie rolls. Top with the peppers and onions.

  • Place 2 skillets on the stove. Put 2 tablespoons of olive oil in one and 1/4 cup olive oil in the other.
