Steps:
- Mix ginger, sugar, water and curacao all together in a saucepan and bring to a slow simmer. Reduce mix by 50 percent until a syrupy consistency is reached. Keep in mind that the syrup will thicken as it cools. Strain warm syrup and allow to cool completely in the refrigerator. Take ginger slices and completely coat in sugar. Spread on sheet pan and slowly dry out in a preheated 225 degree oven for 3 hours. Ginger slices should be dried but still chewy.
- Using champagne flutes, add 1 tablespoon of the syrup and fill to the top with champagne. Drop a small sliver of candied ginger in each glass, enjoy.
SESAME FRIED HEAD-ON PRAWNS WITH CUCUMBER KIMCHI AND KOREAN CHILE AIOLI
Steps:
- In a large mixing bowl combine the panko, sesame seeds, and chile flakes. Season the prawns with salt and pepper and coat well with the flour. Dip the flour-coated prawns into the egg and then the panko mixture.
- Prepare a fryer or medium heavy pot one-third full with the oil and heat over high heat to 350 degrees F. Add the prawns to the oil and fry until golden and crispy. Remove the prawns and drain on paper towels, sprinkle with salt.
- On an oval plate, place a small mound of rice topped with the kimchi. Place two of the prawns over the kimchi and drizzle with the Aioli. Garnish with the sliced scallions.
- Sprinkle the kosher salt on the flesh-side of the cucumbers and then place them flesh-side down in a perforated pan for about 3 hours. Meanwhile, in a large bowl, combine the onion, carrot, ginger, garlic, fish sauce, chile flakes, sugar, and black pepper. When the 3 hours have passed, rinse the cucumbers well with cold water and pat dry with a paper towel. Slice the cucumbers into 1/8-inch half-moon shapes and add to the bowl.
- In a saucepan, bring the vinegar to a simmer and pour it into the bowl of vegetables. Cover the bowl tightly and let it sit at room temperature for 24 hours before serving.
- In a food processor, puree the egg yolks, chile paste, sugar, and garlic. While the processor is running, slowly add the canola oil and the sesame oil until the mixture begins to thicken. Add the vinegar, and season with the salt and pepper. Add a little cold water if the aioli is too thick.
CUMIN-LIME SHRIMP WITH GINGER
These quick, flavorful shrimp are versatile enough to work their way into an assortment of weeknight dinners. Fold into soft tortillas and top with sliced avocado for shrimp tacos, or serve over steamed rice studded with tomatoes, chiles and fresh herbs. They also work well served on top of a red or green cabbage salad. If cumin's not your thing, feel free to swap in another dried, warm spice, such as coriander or curry powder.

- In a large bowl, toss together the shrimp and the cumin until well coated. Season with kosher salt and toss again.
- Heat the olive oil in a 12-inch skillet over medium heat. Add half the shrimp to the pan in one layer and cook undisturbed until they just start turning pink, about 1 minute. Flip and cook for about 1 minute more, then remove from the pan and set aside. They may not be fully cooked at this time, and that's O.K. Repeat with remaining shrimp and leave in the pan.
- Add the reserved shrimp back to the pan with any juices that have accumulated. Stir in the ginger, garlic and red-pepper flakes, if using, and cook for about 30 seconds, stirring to make sure the garlic doesn't burn. Add the lime juice to pan and scrape up any brown bits that have formed at the bottom of the pan. Cook until the mixture is reduced by about half, about 1 minute more. Stir in the lime zest and scatter with the cilantro. Season with flaky salt, if desired.
