- In a large skillet over medium heat, melt 1 tablespoon butter with 1 tablespoon oil. Add the shrimp, red pepper flakes and salt; cook just until the shrimp turn opaque and lightly pink, 4 to 5 minutes. Transfer the shrimp to a bowl. Add the remaining butter and oil to the pan; add onion and sauté until softened and golden, about 5 minutes. Add the garlic and sauté 1 minute; season the vegetables with salt and pepper. Add the beer and bring it to a boil, scraping the pan with a spoon and stirring to incorporate all the yummy browned bits. Cook until the liquid is reduced by half, about 5 minutes. Return the shrimp to the pan; stir to coat with the sauce and warm the shrimp. Serve over cooked grits, polenta, pasta or rice, and sprinkle each serving with chives and parsley. Refrigerate any leftovers. Serves 4.

- Squeeze lemon over shrimp and set aside.
- Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
- Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

- Saute garlic and herbs in butter until garlic is slightly browned.
- Add shrimp, stirring constantly, until shrimp are pink and done.
- Pour in beer, simmer 1 minute more, and serve!
HERBAL SHRIMP DELIGHT WITH BEER SAUCE
Steps:
- In a medium bowl, toss together basil, oregano, parsley, spinach, romaine lettuce, 3 tablespoons olive oil, and white wine.
- In a small bowl, blend the flour and water to a paste.
- Heat 1 tablespoon olive oil in a medium saucepan over medium high heat, and saute the onion, green onion, and garlic 5 minutes, until tender. Mix in the tomato. Reduce heat to low, and blend in the flour and water. Cook and stir until thickened. Mix in the beer and lime juice, season with salt and pepper, and simmer while cooking the shrimp.
- Heat remaining olive oil in a separate medium saucepan. Saute the shrimp about 3 minutes on each side, until opaque.
- Remove shrimp from heat, and finely chop while warm. Serve over the herb and greens mixture, and drizzle with beer sauce. Sprinkle with Parmesan and freshly ground black pepper.

- If using shrimp in the shell, peel and devein them. If using cleaned, defrosted shrimp, skip this step. Either way, dry the shrimp well with paper towels and set aside.
- Put a colander or large strainer in a bowl and set it beside the range. In a large skillet set over high heat, melt 1 Tbs. of the butter. When the butter froths, add the shrimp and season well with salt and pepper. Stir several times as the shrimp cook -- they may brown slightly, which is good. They're done as soon as they're just cooked through and opaque, 3 to 5 min.; cut one in half to check. Remove the pan from the heat; transfer the shrimp with a slotted spoon to the colander. Cover the shrimp loosely with foil and set aside to keep warm while making the sauce.
- Pour off all but 1 or 2 teaspoons of liquid from the pan. Set the pan back over high heat and add the remaining 6 Tbs. butter, swirling the pan once or twice until the butter turns light nut brown, about 2 minute (Any brown bits that have stuck to the pan will become even browner, but they shouldn't burn.) Immediately pour the balsamic vinegar into the pan and start scraping up the brown bits. Continue to scrape and cook until the sauce thickens somewhat and starts to appear glaze-like, about 2 minute The sauce will reduce to a scant 1/2 cup. Turn off the heat and stir in the drained shrimp (discard any accumulated liquid in the bowl) to coat them lightly with the sauce and briefly rewarm them without cooking any further. Taste and adjust the seasonings, if necessary. Sprinkle with the fresh herbs and serve immediately with lemon wedges, if desired.

I just went to a restaurant called Heaven on Seven while in Chicago. I had a dish called Buffalo Shrimp and it was delicious! This is my version of their masterpiece. I served it over white rice and topped it with chopped green onions.
