SAUTEED SHRIMP
Steps:
- Put the flour on a plate and season with a healthy amount of salt and pepper; mix with a fork to combine evenly. Dredge the shrimp in the seasoned flour to coat all sides.
- Heat the butter and oil in a heavy bottomed pan over medium heat until butter stops foaming and just starts to turn a light brown. Add the shrimp, and give it a toss, saute for 5 minutes until the shrimp is firm and there is a crispy coating on the outside. Remove the shrimp to a side plate and cover to keep warm.
- Put the pan back on the heat and add the garlic and shallots. Cook and stir for 1 minute until soft. Add the lemon juice and chicken broth, give it a stir and let it cook down for 1 minute to thicken slightly. Put the shrimp back in the pan and coat in the lemon sauce. Season with salt and pepper and garnish with chopped parsley before serving.
SAUTEED SHRIMP

- In a large saute pan over medium heat, heat the olive oil. Add the garlic and saute until it begins to soften. Add the shrimp and saute for 1 minute. Then add the remaining ingredients and simmer until the shrimp is cooked through and the flavors have combined, about 4 to 6 more minutes. Serve immediately.
SAUTEED SHRIMP WITH LEMON-GARLIC BUTTER
Steps:
- Boil wine, vinegar and garlic in small saucepan until mixture is reduced to 1/4 cup, about 4 minutes. Reduce heat to low. Whisk in butter, 1 piece at a time, allowing butter to melt before adding more. Remove from heat. Stir in lemon juice. Season with salt and pepper. Cover and keep warm.
- Heat oil in large nonstick skillet over high heat. Sprinkle shrimp with salt and pepper. Add to skillet and sauté until shrimp are opaque in center, about 3 minutes. Transfer shrimp to plates. Drizzle lemon-garlic butter over. Sprinkle with lemon peel and chives and serve.

My favorite way to saute fresh shrimp. This is so quick and simple. Serve over rice or angel hair pasta (I usually saute a little more garlic in olive oil and toss it with the pasta before topping with the shrimp). Yum!

- Peel, devein and rinse shrimp.
- Set aside.
- Grate the zest of both lemons, then juice both lemons.
- Keep zest and juice separate.
- In a large bowl, place shrimp then add lemon zest, garlic and half of the olive oil.
- Toss well to coat evenly and season with the salt and pepper.
- Heat remaining oil in a large saute pan over medium heat.
- Saute shrimp in single layer for about 1 minute on each side until cooked through.
- (You may have to work in batches).
- After all shrimp is cooked and removed from pan, deglaze pan with 3 T of lemon juice, stirring up any browned bits.
- Pour sauce over shrimp and serve.

- In a bowl, combine the shelled and deveined shrimp with 1 tablespoon fish sauce, 1/2 teaspoon sugar, and 1/2 teaspoon black pepper. Marinate for 30 minutes.
- When ready to cook, heat 2 tablespoons of cooking oil in a large skillet or wok.
- Add the remaining garlic and sauté for about 10 to 15 seconds on high heat. (be sure not to burn!).
- Add the marinated shrimp to the skillet and stir fry for 1 minute or until shrimp turn pink.
- Transfer the cooked shrimp to a plate and set aside.
- In the same skillet, bring 2 tablespoons of the cooking oil to medium-hot. Add the onion and stir fry for 30 seconds.
- Add the long beans and stir fry with the onion for 1 minute.
- Stir in 1 tablespoon of fish sauce, 1/2 teaspoon sugar, 1/4 cup of water, and cook over medium heat for about 3-4 minutes.
- Return the shrimp to the skillet and mix well with the long beans.
- Transfer to a platter, sprinkle with some black pepper, and serve.

- In a medium bowl, toss shrimp, garlic, rosemary, thyme, and oil. Set aside to marinate at room temperature for 30 minutes.
- Place bacon in a large skillet, and place over medium-high heat. Cook bacon, stirring occasionally, until almost all the fat is rendered, 6 to 7 minutes. Pour off and discard all but about 2 tablespoons of the bacon fat. Add the shrimp, marinade ingredients, and salt and freshly ground pepper to taste; saute, turning frequently, until the shrimp are opaque and just cooked through, about 5 minutes.

- Cover beans with cold water to a depth of 2 inches above the beans. Soak for 4 hours or overnight.
- Drain the beans and place in a saucepan. Cover with cold water to a depth of 2 inches above the beans, bring to a boil, skim the surface, then lower the heat to medium. Cook the beans until they are tender, about 45 minutes. Drain, reserving 1/3 cup of the cooking liquid. Season the beans with salt and pepper to taste.
- Have four plates ready. Heat 2 tablespoons of the oil in a large skillet, add the shrimp and stir in the oil until golden on both sides, approximately 2 to 3 minutes. - Put oven rack in middle position and preheat oven to 400°F.
- If using whole coconut, pierce 2 softest eyes of coconut with a small screwdriver or a metal skewer, then drain and discard liquid. Bake whole coconut 15 minutes. Break shell with a hammer and remove flesh, levering it out carefully with screwdriver or point of a strong knife. Finely shred enough coconut to measure 1 cup using the 1/8-inch-wide holes of a box grater.
