BAKED TOMATOES

Steps:
- Preheat the oven to 450 degrees F.
- Slice the tomatoes from core to core. Remove and discard the seeds and juice, and add the tomatoes to a casserole dish. Drizzle with olive oil and sprinkle with salt and pepper.
- Combine the 2 tablespoons olive oil, panko, Parmesan, parsley, garlic, shallots, red pepper flakes and some salt and pepper together in a small bowl. Fill the tomatoes with the panko mixture. Bake 20 minutes. Drizzle with a splash of olive oil before serving.
BREADED TOMATOES
I grew up in southern California, and my dad took advantage of our long growing season by keeping a great garden. Dad grew potatoes, lettuce, radishes, onions and lots of tomatoes. If we were lucky enough to have meat on Sunday, Mother would fix this tomato side dish. The sauce gives them a different flavor.

- Peel and core tomatoes but leave them whole. Dip each whole tomato in melted butter. In a small bowl, combine saltine crumbs and Parmesan cheese. Roll tomatoes in crumb mixture, gently pressing crumbs onto tomato. Place tomatoes in a single layer in a greased shallow baking dish. If there are any crumbs or butter left, combine them and sprinkle over the tomatoes. Bake at 475° for 15 minutes or until tomatoes begin to brown and are heated through. Watch closely; they burn easily. Meanwhile, for cheese sauce, melt butter in a medium saucepan. Stir in flour, salt and pepper. Add milk all at once; cook and stir over medium heat until thickened and bubbly. Remove from the heat; stir in Parmesan cheese. Serve over tomatoes.

SAVORY GOAT CHEESE AND TOMATO BREAD PUDDING
Steps:
- Grease the bottom of a 13 by 9 by 2-inch baking dish or other shallow 3-quart baking pan.
- Butter each bread slice on one side. Stack the bread, 6 at a time, and cut on the diagonal into triangles. Place half of the bread pieces, buttered sides down, in the bottom of the prepared dish. Scatter the goat or feta cheese over the bread in one layer. Scatter the cherry tomatoes over the cheese. Top with the remaining buttered bread pieces, buttered sides up.
- In a bowl with a whisk, beat eggs, milk and pesto until well-blended. Pour over the bread and cheese mixture in the dish. Tamp down the top pieces of bread lightly with the back of a fork so that they soak up some liquid. Sprinkle the top with the grated cheese. Cover the dish tightly with foil and refrigerate overnight.
- To serve, remove the dish from the refrigerator and place it in a cold oven; turn the oven on to 350 degrees. Bake for 35 minutes with the foil on; remove foil and continue to bake until pudding is puffed and golden brown on top, 25 to 30 more minutes.
SAVORY BAKED TOMATOES
Steps:
- Preheat oven to 375 degrees. Slice tomatoes in half through the middle of the tomato. In small bowl combine olive oil, garlic, basil and oregano. Drizzle over tomatoes. Bake for 20 - 25 minutes. Serve with Parmesan cheese.
SAVORY BREAD PUDDING WITH TOMATOES AND HERBS
Stale baguettes and country breads give me a welcome excuse to make savory Italian bread puddings, called stratas. You can add different vegetables in season, such as sautéed mushrooms or greens to the mix.

- Preheat the oven to 350ºF. Oil or butter a 2-quart baking dish or gratin. If the bread is soft, toast it lightly and rub all the slices, front and back, with the cut clove of garlic. If it's stale, just rub with garlic Mince what garlic remains. Combine the two cheeses in a small bowl.
- Layer half of the bread slices in the baking dish. Top with half the tomato slices. Sprinkle the tomato slices with salt, pepper, and half the thyme, rosemary, and remaining garlic. Top with half the cheese. Repeat the layers.
- Beat together the eggs and milk. Add 1/2 teaspoon salt and a few twists of the pepper mill, and pour over the bread and tomato layers. Place in the oven and bake 40 to 50 minutes, until puffed and browned. Remove from the oven and serve hot or warm.

- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Stir the flour, baking soda, salt, and sugar together in a bowl, and cut in the shortening with a pastry cutter until the mixture looks like crumbs. Mix in the vegetable juice cocktail just until moist, and turn out onto a well-floured work surface. Gently knead several times just until dough holds together, roll out to 1/2-inch thick, and cut into rounds with a biscuit cutter. Place the biscuits onto the prepared baking sheet.

- Remove stem ends from tomatoes.
- Cut tomatoes in half horizontally.
- Trim ends to make the halves stand flat, if necessary.
- Arrange cut side up on microwaveable plate.
- Mix crumbs and herbs; mound evenly on tomatoes.
- Microwave uncovered on high for 2 minutes, rotating after 1 minute.
- Sprinkle cheese on top of tomatoes and either microwave 1 minute until cheese is melted, or transfer tomatoes to an appropriate pan to broil in the oven or toaster oven until the cheese is bubbly and begins to brown.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch glass baking dish and place bread cubes in the dish.
- Heat olive oil in a large skillet over medium-high heat. Add shallot and garlic and cook, stirring constantly, until fragrant, about 1 minute. Add tomatoes and season with salt and pepper. - Preheat the broiler to hot. Halve and seed the bell peppers, arrange on the broiler rack, and cook until skin is charred. Cool for 10 minutes, peel off the skin and chop the flesh.
- Slice the tomatoes into strips, place in a heatproof bowl, and add the boiling water. Let soak.
- Place the yeast and sugar in a small pitcher or bowl and add the water, leave for 10-15 minutes, until frothy. Sift the flour into a bowl and add 1 teaspoon dried rosemary. make a well in the center and pour in the yeast mixture. Add the tomato paste, the tomatoes and soaking liquid, the bell peppers, yogurt, and the half the salt. Mix together to form a soft dough.
- Knead the dough on a floured counter for 3-4 minutes, until smooth and elastic. Place in a floured bowl, cover and leave in a warm room for 40 minutes, until doubled in size. Knead the dough again and place in an ungreased 9-inch round spring form cake pan. Using a wooden spoon, form "dimples" in the surface. Cover and leave for 30 minutes.
- Brush with oil and sprinkle with remaining 1 teaspoon of rosemary and salt. Bake for 35-40 minutes in an oven preheated to 425. Once bread has cooled release from pan.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish, or one of similar size.
- In a small saucepan, combine the raisins, wine, brown sugar, tomatoes, Worcestershire sauce, basil and cayenne pepper. Simmer over medium-low heat for 10 minutes.
- In a large skillet, melt butter. Toss the bread cubes in the butter to coat, then toss with Monterey Jack cheese, and transfer to the prepared baking dish. Pour the tomato mixture over the bread.
