DAIRY-FREE SAVORY SAUSAGE GRAVY

Fairly basic, large-batch sausage gravy recipe that I've developed over time. The family loves it every time, so the large batch is needed! Normally I'd use soy milk for most things, but I've found that in greater quantities it tends to froth badly. Almond milk does not have this problem though! Serve over warmed biscuits or toasted bread of your choice.

Dairy-Free Savory Sausage Gravy image

Steps:

  • Break sausage apart in a large skillet over medium-high heat. Cook until starting to brown, 3 to 5 minutes. Add Worcestershire sauce to the mix and let it heat up before adding beef bouillon and nutmeg. Stir and cook sausage until no longer pink, 3 to 5 minutes more.
  • Reduce heat to medium low and sprinkle in flour gradually. Cook, stirring constantly, until flour coats the sausage and is completely absorbed. Cook for 1 to 2 minutes more.
  • Pour in almond milk gradually, stirring constantly until gravy starts to thicken, up to 12 minutes. Add a little more almond milk if too thick. Season with salt and pepper. Continue stirring vigorously until gravy reaches desired thickness. Remove from heat and let cool. Taste and adjust seasoning as desired.

Steps:

  • Crumble sausage into a large saucepan; cook over medium-low heat. Add onion; cook and stir until transparent. Drain, discarding all but 2 tablespoons of drippings. Stir in flour; cook over medium-low heat about 6 minutes or until mixture bubbles and turns golden. Stir in milk. Add seasonings; cook, stirring, until thickened. To serve, slice biscuits and spoon gravy over halves.

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
  • Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
  • Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

Steps:

  • Cook sausage in a large skillet, breaking up into small pieces as it cooks.
  • Once fully cooked, add butter and mix well until melted and mixed together.
  • Add flour and mix together.
  • Add milk 1/2 cup at a time, stirring well after each addition. Mixture will become very thick and then slowly thin out. If you add all of milk at once it will clump. Add it slowly so that it will be a smooth gravy. This is called making a roux.
  • Once all milk is added add salt and pepper to taste.
  • Serve over biscuits.

Add half the flour and stir until absorbed into the butter and coats the sausage, continue adding the flour little by little, stirring it around until it has all been used and the pan looks dry. The flour will just start to brown, about a minute more.
  • Step 2Slowly add 2 cups of milk, stirring constantly until it thickens, adding more milk as needed. This process can take up to 10 minutes, so don't add too much all at once, add as needed until you get a nice thick "gravy". If the sauce becomes too thick, add more milk in small amounts.
  • Step 3Once the gravy is nice and thick, add the Slap yo Mama or equivalent, thyme, sage, and black pepper. Stir, and taste. Adjust seasonings and serve immediately over warmed halved biscuits.
