A favorite with Swedes in our Swedish organization - creamy on top and dense on the bottom. Serve with whipping cream and/or sweetened berries, if desired.

Steps:
- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
- Preheat oven to 325 degrees F (165 degrees C). Grease an 8-inch square baking dish.
- Stir milk into rice until evenly combined. Mix eggs, sugar, pudding mix, butter, vanilla extract, and salt into rice mixture; transfer to the prepared baking dish.
- Bake in the preheated oven until a knife inserted in the pudding comes out clean, about 1 hour.

Steps:
- Using a rolling pin, crush the cardamom seeds until very fine. Place the cardamom, milk, rice, and butter into a deep, heavy pan. While slowly stirring the milk mixture, cook over medium heat for 90 minutes. Lower the heat if necessary to prevent the milk from boiling or overheating. Stir in the sugar, and continue cooking until the mixture thickens, about 15 minutes more.
- Pour the rice mixture into a serving bowl. Place 3 tablespoons butter on top, and allow to melt. Dust with cinnamon. Serve warm or cold.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
- Bring milk to a boil in a large saucepan. Stir rice and salt into milk, reduce heat to medium-low, and cook, stirring frequently, until rice is tender, about 18 minutes.
- Beat egg yolks, 1/2 cup sugar, butter, and vanilla extract together in a bowl until combined. Stir 1 cup of the hot rice mixture into egg mixture until well-mixed.
- Pour egg mixture into rice mixture in the saucepan; bring to a boil, stirring constantly, until mixture thickens, about 1 minute. Pour into prepared casserole dish.
- Beat egg whites in a glass or metal bowl until soft peaks form. Gradually add 3 tablespoons sugar, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Spread egg white mixture over rice mixture, ensuring that egg whites are spread to the edges of the casserole dish.
- Bake in the preheated oven until golden, about 15 minutes.

WORLD'S BEST RICE PUDDING
Steps:
- Preheat the oven to 300 degrees F. Heat the butter in a 4 quart saucepan. When frothy, add the rice and cook for 1 minute. Slowly add the milk, pinch of salt, sugar, vanilla and 1/2 of the cranberries and bring to under a boil. Transfer to a 9-inch square baking pan and set in the oven. Bake uncovered for 1 1/2 hours, stirring every 15 minutes, then bake undisturbed for another 30 minutes. Then stir in the remaining 1/2 of the cranberries and bake for another 30 minutes (for a total of 2 1/2 hours).
- Variations: you can to add heavy cream in the last 30 minutes of baking. Or if you want a crusty topping, reduce sugar to 1/4 cup. Once out of oven, crumble brown sugar and butter over the rice pudding and place under the broiler until melted and bubbly.
SCANDINAVIAN RICE PUDDING
This is a recipe my grandmother taught me to use up leftover rice. It's a bit different from the usual rice pudding, but it's easy and very tasty. This recipe calls for raisins, but you can omit them or substitute other dried fruits like cranberries if you prefer. Please note that the prep time does not include the time needed to cook the rice. I usually use leftovers.

- Combine rice, eggs, sugar, salt, milk, raisins, and lemon.
- Spray a baking dish with cooking spray and pour in the rice mixture. Tap the dish on the counter to settle it.
- Sprinkle the top with the cinnamon and nutmeg and drop small pieces of the butter evenly across the pudding.
- Bake for 1 hour and 350°F May be served warm or cold.
SWEDISH RICE PUDDING
This family favorite came from my great-grandmother Ida Maria, who was born in 1887. She grew up in Dalarna, a province in Sweden, and moved to the United States when she was 16. And now we prepare this recipe every year for the holidays. I love it! It you want, serve with Lingonberries.

- In a medium sized bowl, beat 4 eggs lightly, add 1 cup sugar and beat a little.
- Add 1/2 teaspoon nutmeg.
- Add 1 cup cooked rice to the mixture.
- Add 1 can Carnation evaporated milk and stir.
- Pour into a 2 quart dish and add the low-fat milk.
- Sprinkle cinnamon on the top.
- Add butter (small"clicks" on top- each"click" probably 1/2 tablespoon).
- Bake in a 325 degree oven for 1 1/2 hours or until the pudding's top moves a little in the center if you push it gently.
- Enjoy!
RICE PUDDING WITH ALMONDS AND CHERRY SAUCE

- Combine milk, 5 tablespoons sugar and rice in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean and bring to boil. Reduce heat to medium and simmer until rice is tender and mixture is thick, stirring frequently, about 35 minutes. Discard vanilla bean. Mix in almonds. Pour rice pudding into 13x9x2-inch metal baking pan; cool completely.
- Using electric mixer, beat cream and 2 tablespoons sugar in medium bowl until medium peaks form. Fold cream into rice pudding mixture in pan. Cover and refrigerate until cold, about 4 hours. (Can be made 1 day ahead. Keep refrigerated.)
- Cook cherries, lemon and remaining 3/4 cup sugar in heavy medium saucepan over medium heat until cherries are tender, stirring occasionally, about 5 minutes. Add cornstarch mixture and bring to boil, stirring constantly. Discard lemon. Spoon pudding into bowls. Spoon hot cherry sauce over.
CHRISTMAS RICE PUDDING
My heritage is Swedish and this recipe is known among Swedes as "grut". My Grandma Anna would make it every Christmas Eve, and we would eat it with cream poured over. Grandma always put a cinnamon stick and one almond in the rice before serving. Whoever found the almond was supposed to get married next, according to tradition.

- In a heavy saucepan, combine the water, rice and salt; bring to a boil over medium heat. Reduce heat; cover and simmer for 15 minutes or until water is absorbed. DANISH RICE PUDDING W/RASPBERRY SAUCE (RIS A LA MANDE)
This is the traditional Danish Christmas dessert, served on Dec 24 before we walk around the Christmas tree and sing carols. The texture of the rice pudding is somewhat coarse due to the chopped up almonds. A whole blanched almond is placed in the dish and whoever gets this almond wins the almond present. This game is loved by young and old with everybody guessing who has the almond. Usually it is not revealed until all of the dish is gone. The dish can of course be served any time throughout the year but you will be hard pressed to find it on any other date if in Denmark. I blanch the almonds and chop by knife; freshly blanched almonds have a fresher flavour I find.

- Bring milk to a boil slowly in a large pot.
- Add rice, keep simmering until rice is tender, stir every 3 min or so to prevent rice and/or milk burning at the bottom. This step takes approx 45 minute While the rice is simmering you can make the raspberry sauce and chop the almonds.
- When rice is firm remove from heat and let cool. When cool add vanilla sugar, sugar and almonds.
- Fold in whipped cream.
- Chill and serve with warm raspberry sauce.
- SAUCE:.
- In medium sauce pan place frozen raspberries and 2 tbsp of water, heat until thawed, add sugar and stir. Let simmer for approx 3-5 minute.
- Mix cornstarch with water and add to the sauce to thicken. This step can be omitted if you want a more natural and thinner sauce.
- TIP- you can also serve this dish with a strawberry sauce or a mix of raspberry and strawberry. I prefer the raspberry sauce as it adds a bit of tartness to an otherwise sweet dish. Traditionally the dish is served with a cherry sauce, our family never did though instead preferring the raspberry or strawberry sauce.

This is a "Land o'Lakes" recipe. It is a very delicious rice pudding, and would be sublime topped with a strawberry, blueberry or rasberry sauce. It is very simple and very homey, quite the comfort food. I am sure the meringue can be left off quite easily if you are not a meringue lover.

- Heat the oven to 350 degrees.
- In a large mixing bowl mix together 1/2 Cup sugar,cornstarch, salt and nutmeg.
- Using a wire whisk, beat the milk, egg yolks and vanilla into the sugar mixture.
- Stir in the rice.
- Pour into ungreased 1 1/2 quart casserole.
- Set casserole in 9-inch square baking pan.
- Place in the oven; pour hot water 1- inch deep into 9- inch square baking pan.
- Bake, stirring occasionally, until pudding is creamy and the milk is absorbed (about 1 1/2 hours).
- Remove from the oven.
- Heat oven to 400 degrees.
- In small mixing bowl beat egg whites at high speed, scraping bowl often, until soft peaks form (1 to 2 minutes).
- Add the sugar gradually, and continue beating until stiff peaks form (1 to 2 minutes).
- Spread meringue over pudding, sealing around edges.
- Bake for 5 to 8 minutes more, or until meringue is lightly browned.

- Boil 1 1/3 cup of water. Add rice, cover and simmer for 15-20 minutes until rice is tender.
- In a 2 quart casserole dish, lightly beat egg whites and egg.
- Add Splenda and beat.
- Add the milk, vanilla and almond flavors and beat until well mixed.
- Add the rice and stir until soupy.
- Lighty sprinkle with cinnamon to top.
- Bake at 350 in a water bath for 1 1/2 hours or until it is mostly firm.
- Traditionally served with Lingonberries, cranberry relish can be substituted.
