HOMEMADE PEANUT BUTTER CHEWS
The peanut butter chews that were sold in school cafeterias. I make these for my kids all the time, and sometimes drizzle chocolate and butterscotch on top of the cookies. Rich, but excellent!

Steps:
- In a large saucepan over medium heat, combine corn syrup and white sugar. Bring to a boil, boil for one minute, and remove from heat. Stir in peanut butter until well blended. Mix in cereal until evenly coated. Drop by spoonfuls onto waxed paper.
- In a glass bowl in the microwave, or using a double boiler, melt chocolate chips and butterscotch chips, stirring frequently until smooth. Drizzle on the top of the cookies.

PEANUT BUTTER CHEWIES RECIPE BY TASTY
Here's what you need: clear corn syrup, granulated sugar, peanut butter, vanilla extract, corn flakes cereal

Steps:
- Put sugar and syrup in a saucepan, stir, and heat to a boil.
- Remove from heat and add the peanut butter and vanilla. Stir until smooth.
- In big mixing bowl, pour over the corn flakes. Combine gently so all the corn flakes are covered.
- Drop by teaspoon onto foil. Makes a bunch. Allow to cool and set up, about an hour.
- Enjoy!

SCHOOL CAFETERIA PEANUT BUTTER COOKIES
The best sublime peanut butter cookies ever! Relive the best part of the school cafeteria without having to go back to school. This large batch is best suited for institutional cooking using a 40 to 60 quart mixer. Dough may be stored in buckets for up to a week, and baked fresh daily.

Steps:
- Preheat a convection oven to 325 degrees F (165 degrees C). See note for non-convection oven. Line baking sheets with parchment paper.
- In a large bowl, cream together the shortening, white sugar and brown sugar until smooth. Mix in peanut butter until well blended. Scrape down the sides of the bowl with a plastic scraper between additions. Add eggs 5 or 6 at a time, mixing well after each addition. Scrape down bowl, and mix for a minute. Combine the flour, baking soda and salt; gradually mix into the dough until fully incorporated. Scrape down the sides of the bowl one more time, and be sure the bottom has mixed evenly.
- Scoop out dough using an ice cream scoop, or roll into 2 inch balls. Place cookies 3 inches apart on the prepared baking sheets. Press down lightly with a fork to make a criss-cross pattern.
- Bake for 7 minutes in the preheated oven, until the edges are lightly toasted. Allow cookies to cool on the baking sheet for at least 5 minutes so they do not crumble.

Steps:
- Combine butter, sugars, peanut butter, eggs and vanilla in a mixing bowl.
- Mix, creaming well.
- Sift together flour, baking powder and salt.
- Add rolled oats and mix well.
- Add dry ingredients to creamed mixture.
- Mix until well blended.
- Spread batter into a greased 12-by-18-inch cookie pan with sides.
- Bake at 350 degrees for 25 to 30 minutes.
- Do not over-bake.
- For the glaze: Combine powdered sugar and peanut butter.
- Gradually add hot water.
- Spread glaze on warm Peanut Butter Chews.
- Cut while warm.
- Cookies will be of a chewy consistency.

Steps:
- Preheat oven to 350 degrees F.
- In a mixing bowl, combine butter, sugars, peanut butter and vanilla. Cream until blended.
- Add one egg at a time, beating until blended.
- Sift flour, baking powder and salt together. Add rolled oats (or coconut) and mix.
- Add dry ingredients to creamed sugar butter mixture until blended.
- Spread batter into a greased 12 x 18 sheet pan (Also called a half sheet or 2/3 sheet pan available from restaurant supply houses.).
- Bake for 20 - 25 minutes. Do not overbake. Cookies should have a chewy consistency.
- Remove and cool for 15-20 minutes while you make icing.
- Prepare icing: Combine powdered sugar and peanut butter.
- Add very hot water and beat well until smooth consistency.
- Spread on cookies while still warm. Let them cool another 15-20 minutes before cutting.
- After cutting, remove from pan to finish cooling.
- Can be cut into 2 inch to 3 inch squares. Can make three dozen depending on size of bars.

PEANUT BUTTER CHEWS
This is a easy snack. If you use the clear corn syrup this recipe is okay for any child that is on a diet where they cannot have any food coloring, dyes, or such. My ex SIL's son was on a diet for A.D.D. This was one of his favorite treats he could have.

- In saucepan combine sugar& corn syrup.
- Stir.
- occasionally, bring to a boil over medium heat.
- and boil 1 minute.
- Remove from heat, stir in peanut butter until smooth.
- Pour over cereal, stir to coat well.
- Press evenly into 9 inch square pan coated.

BUTTER CHEWS
These were a favorite of my DS and DD when they were kids. It is from a cookbook I bought in 1958. You can make the bottom layer thicker by 1 1/2 to double the ingredients but allow a little longer cook time.
