Steps:

  • Prepare Oat Stuffing: Melt butter in med.
  • skillet; cook 1 lg minced onion on medium heat, stirring frequently, until light brown.
  • Stir oats and spices; cook until oats are golden brown, stirring frequently, approx 3-4 min.
  • For Chicken: Fill wishbone area of chicken with stuffing.
  • Fasten neck skin to back with skewer.
  • Fold wings across back; let tips touch.
  • Fill main cavity lightly with stuffing.
  • (This will expand while cooking, so don't stuff too much in!) Skewer/tie drumsticks to tail.
  • Place chicken, breast up, in shallow roasting pan.
  • Arrange halved onions around chicken.
  • Brush chicken and onions with 1/4 c.
  • melted butter.
  • Leave uncovered; roast at 375.
  • Baste several times with remaining butter during cook time, approx 1-1/2 hrs.

3 -4 lbs fryer chickens, in pieces

The Best Roast Chicken image

Steps:

  • Pat the chicken dry with paper towels. Sprinkle generously with at least 4 teaspoons salt all over the outside of the bird and inside the cavity. Let the chicken sit at room temperature for 1 hour to allow the salt to penetrate. Or you can refrigerate it, uncovered, up to 1 day ahead.
  • Set a wire rack inside a foil-lined rimmed baking sheet. Position a rack in the lower third of the oven and preheat to 425 degrees F.
  • Toss the lemon wedges, garlic and herbs with 1 teaspoon salt and 1 teaspoon pepper in a medium bowl. Stuff the lemons, garlic and herbs in the cavity of the chicken. Tie the legs together with kitchen twine and tuck the wing tips underneath the back. Transfer the chicken to the prepared baking sheet. If you refrigerated the chicken, let it sit at room temperature 30 minutes to 1 hour before roasting.
  • Just before roasting, brush the oil over the entire outside of the chicken (but don't worry about the bottom), making sure to get into all the nooks and crannies so they evenly brown. Roast the chicken, rotating the baking sheet after 35 minutes, until the skin is golden brown and crispy and an instant-read thermometer inserted into the thickest part of the breast registers 155 degrees F, 70 to 80 minutes (the temperature will climb to 165 degrees as the chicken rests).
  • Let the chicken rest on the baking sheet for 20 minutes (do not tent with foil or the chicken will overcook and the skin will get soggy).
  • Transfer the chicken to a cutting board and discard the lemons, garlic and herbs. Carve into serving pieces.

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

  • Cut chicken into serving pieces.
  • Slice potatoes in medium thick rounds.
  • Melt 1 heaped tablespoons.
  • of butter in a skillet or saucepan.
  • Brown chicken joints lightly on both sides and then remove them.
  • Grease an ovenproof casserole dish and put in layers as follows: sliced potatoes, whole shallots or sliced onions (all well-seasoned), chicken.
  • Dot each layer with little knobs of butter.
  • Repeat layers until all ingredients are used, ending with a layer of potatoes.
  • Pour stock over the potatoes, shallots and chicken.
  • Cover with buttered greaseproof paper, then with lid.

Scottish Highland Chicken With Whisky and Cream image

Steps:

  • Preheat oven to 400°F
  • Pat the chicken dry with paper towels and rub all over with salt, pepper and half the olive oil.
  • Combine the remaining oil and butter in a lidded roasting pan and place over medium heat.
  • When butter is foaming, place the chicken, breast side down, in the pan and brown for about 4-5 minutes, then turn and brown on the other side for the same length of time. Drain off most of the fat.
  • Return the pan with the chicken to the heat and, working quickly, pour the whiskey over it and then set alight. Let the flame die down and then add the broth.
  • Cover the chicken with the roasting pan lid (or tuck foil all the way around) and transfer to the oven to bake for about 45-50 minutes.
  • When the chicken is cooked, transfer it to a cutting board to rest.
  • Drain off some of the accumulated fat and then set the pan on a medium high heat.
  • Add a spoonful of water to loosen bits clinging to the bottom of the pan, and then add the cream, stirring as you do so.
  • Bring to a boil and let cook for about 2-3 minutes.
  • Add the parsley to the sauce and keep warm.
  • Section the chicken and serve the sauce at table with the chicken. Serves 4-6.

Steps:

  • Cover the bottom of a 10 X 18 X 2 1/2 inch oval clay cooking pan (or a comparable glass or ceramic pan) with the olive oil.
  • Place cut up chicken in pan skin side up.
  • Place a bay leaf and chunk of onion under each piece.
  • Dot chicken with butter pieces.
