This is better than the original "Chex Party Mix"...in my opinion! My mom made this every Xmas and I always gave it to my teachers, relatives, etc.....Makes a bunch!!

Steps:
- Mix cereals, nuts, and pretzels in lined copier paper box gently to keep from breaking.
- Mix salts, oil, and worcestershire sauce in bowl and drizzle over cereals, nuts, and pretzels til coated.
- Bake in large turkey roaster at 250 degrees for 2 hours stirring every 15 minutes.
- Cool thourghly and store in air tight containers.

SCRAMBLE MIX
This is the end result of a number of recipes that I have tried and adapted over the years. The most recent "tweaking" is the use of Bugles instead of cheese crackers, an idea I gleaned from Recipezaar and which my son tells me was an excellent change. I make multiple roast pans full of this over the course of each Christmas season.

Steps:
- Preheat oven to 300°F.
- Mix first 4 ingredients in roasting pan.
- In a measuring cup mix together remaining ingredients & pour over cereal mixture.
- I cook uncovered and every 15 to 30 minutes I remove from oven, cover and shake to mix thoroughly.
- Continue for 30 to 90 minutes, or until mixture is hot throughout. I usually double the recipe (hence the range of cooking time) and let dry for a while in the oven after I have turned it off.

MEATY COUNTRY BREAKFAST SCRAMBLE
A meaty, stick to your bones, simple dish that will please the whole family. A real meat and potatoes basic dish, a definite comfort food. I developed this on my own after not being fully satisfied from frozen pre-made skillet/scrambles. For this dish I recommend you break out two large skillets. The meal, in my opinion, almost tastes better the second time around. A definite meal ideal for leftovers.

Steps:
- Get 2 large skillets / sauce pans.
- In the first pan put enough oil to lubricate and brown the potatoes O'Brien on med to high heat, stirring occasionally (per package directions, yours may vary).
- In the second pan brown the breakfast sausage.
- In a bowl beat the eggs along with the milk and set aside.
- Just as the sausage finishes browning, toss in the ham with it to put a little color on it (it's diced and pre-cooked generally, so this should go quick).
- Right after you add the ham to the sausage, add the green onions, bell peppers, and mushrooms to the potatoes O'Brien in the first pan, and sauté the potatoes and veggies together for about 5 minutes.
- Once the ham has browned slightly, drain the fat, and add the sausage and ham to the first pan with the potatoes and veggies and stir the mixture together, then stir occasionally.
- After dumping the sausage and ham, put the pan back on the heat and use it to scramble your eggs (the grease from the sausage will do a wonderful job lubricating the pan and imparting a little flavor to the eggs).
- Once the eggs are scrambled fold them into the first pan, do not over mix, or you will turn the texture to mush.
- Top the mixture with cheese, and gently stir to mix in the cheese,.
- Serve and enjoy!
TOFU SCRAMBLE RECIPE BY TASTY
Here's what you need: tofu, bell pepper, onion, oil, salt, black pepper, onion powder, garlic powder, turmeric, lemon juice

Steps:
- Drain tofu from container, wrap it in a paper towel, and place it on a plate. Rest another plate on top of the tofu and microwave for 3-5 minutes.
- Unwrap the tofu and cut into cubes.
- Place the tofu in a bowl and mash with a fork.
- Cut the top off a bell pepper and remove all the seeds and thinly slice.
- Chop the onion.
- Heat oil in a pan over medium heat. Add the onions and peppers, and cook until softened.
- Add in the tofu and cook on medium heat until most of the water has evaporated.
- Add the salt, pepper, onion powder, garlic powder, and cumin, and mix well, until all the seasonings are evenly distributed.
- Add the lemon juice to the tofu and mix until evenly combined.
- Remove the tofu from the heat and serve.
- Enjoy!

SCRAMBLED TOFU MIX (VEGAN)
This is inspired by the "Tofu Scrambler Seasoning Mix" by Fantastic Foods (but with a lot more flavor and no wheat). 1 batch will season 7 boxes of extra-firm silken tofu, each of which will serve 2-4 hungry breakfast eaters, depending on what else you serve with it. Keep on hand for an easy Sunday brunch; Perfect for camping; In a pretty jar, it makes a nice gift for anybody who can't eat eggs (vegans, people with high cholesterol, etc).

Steps:
- Mix all ingredients in an airtight jar or Ziploc bag.
- To serve: Heat 1 tablespoon oil in a skillet. Crumble 1 12 oz. box of extra-firm silken tofu into a large bowl and mix in 1/4 cup (or more) Scrambled Tofu Mix. Mix until tofu is well coated, but do not mash the tofu too much. A plastic spatula works best. You want it to resemble the texture of scrambled eggs. Add to skillet and brown. Serve with salt, pepper, hot sauce, and extra nutritional yeast, if desired. Attach instructions to jar if giving as a gift.
- You can add any veggies you like. Simply sautee them before adding the tofu mixture to the skillet or use cooked, leftover veggies.
SCRABBLE (CHEX PARTY MIX)
Steps:
- Mix dry and liquid spices together, add to oil in blender or food processor. Mix well. Let stand for 1 hour, blend occasionally.
- Divide cereal, nuts and pretzels between 2 large roaster pans in layers, cereals, nuts, pretzels. Pour spice mix over with large spoon, stir cereal mix frequently and re-blend spice mix occasionally. Divide cut slices of butter over cereal mix.
- Bake in 250 degrees F oven for 45 min, stir every 15 min. Cool. Store in air tight containers.

Steps:
- In a large nonstick skillet, cook tortilla strips in 2 teaspoons oil for 5 minutes or until lightly golden brown but not crisp. Add the onion, jalapeno and remaining oil; cook 2 minutes longer. , Add the eggs, tomato, beef, salt and pepper; cook and stir until eggs are completely set. Sprinkle with cheese; cover and let stand for 2-3 minutes until cheese is melted.
