GROUPER FILLETS WITH GINGER AND COCONUT CURRY
The chef Patrick Jamon applies French cooking techniques to tropical ingredients grown, caught or gathered near his restaurant, Villa Deevena in Los Pargos, Costa Rica. He is particularly fond of grouper, which is often caught by his son Dean and served at the restaurant, but you could substitute red snapper, cod or mahi-mahi. When reducing the coconut milk, be sure to keep it at a simmer rather than a boil, so it doesn't curdle. Red curry paste can vary in its intensity by brand, so you'll want to adjust the amount to taste.

- Heat oven to 225 degrees.
- Season the fish generously with salt and pepper. Heat 2 teaspoons oil in a large skillet over medium-high. When the oil is hot, add the fish and cook until browned on both sides, about 3 minutes per side. Transfer the fish to a baking sheet and place in the oven to keep warm while you prepare the rest of the dish.
- Add the remaining 2 teaspoons oil to the skillet. Add the spring onion and cook, stirring frequently, until lightly browned, 2 to 3 minutes. Add the ginger and turmeric and cook, stirring frequently, 1 minute. Add the carrot, snow peas and green peas and cook, stirring occasionally, until crisp-tender, 3 to 4 minutes. Transfer the vegetables to a bowl and cover to keep warm.
- Add the coconut milk and 1 tablespoon curry paste to the skillet, bring to a simmer over medium, then reduce the heat to medium-low and simmer until liquid is reduced by about one-third, about 6 minutes. Whisk in more curry paste according to taste, if desired. Stir in the cooked vegetables and heat until warmed, about 1 minute.
- Divide the fish among shallow bowls. Spoon the sauce and vegetables over the fish, garnish with cilantro and serve.

RODBENDERS ISLAND SPICED FRIED OR GRILLED GROUPER
Steps:
- In a large bowl combine the adobo seasoning, bijol, paprika, scallions, red pepper, hot sauce, olive oil, and water; whisk marinade together.
- Place fish fillets in a bowl or a ziplock bag. Cover fish with marinade. Let sit for 1 to 2 hours.
- If grilling fish, place over hot grills until brown.
- If frying the fish, pour the flour into a bowl. In a second bowl, combine milk and eggs. In a third bowl, combine cornmeal, garlic powder, paprika, dried oregano, and salt and pepper. Dredge fillets in flour, then into the egg wash, and finally dip them in the cornmeal mixture.
- In a large skillet heat 2 inches of canola oil. When the oil reaches 375 degrees F., or 1 drop of egg wash cooks and rises to the top immediately, add the fillets to the oil, 2 at a time. Fry the fillets until golden brown. Fillets can also be deep fried.
- Serve with Mango and Black Bean Salsa.
- Combine all ingredients together in a medium size bowl. Mix to blend ingredients evenly throughout.

Steps:
- Stir together bourbon, oil, salt, pepper, lime juice and honey until emulsified. Pour into shallow dish.
- Lay grouper filets in bourbon mixture. Turn to coat and refrigerate for 1-4 hours.
- Pour crushed pecans into another shallow dish.
- Pour enough olive oil into deep frying pan to cover bottom and preheat on medium-low.
- Dip filets into pecans, pressing firmly to coat evenly. Turn over and coat other side.
- Fry in pan until pecans turn golden brown. Gently turn over and cook other side; approximately 10 minutes per side.
- Can also use with other firm-fleshed fish or chicken.

LEMON BLACKEN GROUPER
I like this because you know when you're eating fish it's hard to get enough lemon on there. You either put too much or not enough. This way seems to make it just about even all over the fish.

Steps:
- In large skillet melt butter.
- Add garlic salt and pepper
- Let this cook over medium heat for 1 minute, then add grouper or whatever fish you like.
- Let the fish cook until about 3/4 the way done, then put a little butter on top of fish and add blackening seasoning. When fish is done, put on a plate and move to the side and keep it warm.
- Stir in lemon juice into pan drippings. If you need a little more butter and garlic, put some in pan. Then add green onions and mushrooms. Let cook until green onions and mushrooms soak up lemon juice or until done.
- Taste mushroom and if it makes you make a sour face, then you know it's done. If not, add a little more lemon juice.
- Spoon over fish and enjoy.
