Seafood Kare-Kare Recipe - (4.4/5) image

Steps:

  • Steam cream dory, crab, prawns and mussels until cooked. Cut the crab in halves and slice the cream dory. Set aside. You can also set aside the liquid from which you steamed them so you can use it for the sauce later. Heat up the oil, then put in the Achiote seeds for a couple minutes until the oil becomes deep red. Strain out the seeds. Sauté garlic and onions in oil until onions become translucent. Add water or broth or the liquid from which you steamed the seafood with. Stir in the peanutbutter, salt and pepper. Add the vegetables and simmer until they are half-done. Add mussels and prawns and simmer for another 5 -10 minutes. Then add the pechay, crab and cream dory slices and simmer for another five minutes. Serve with steamed rice and shrimp paste.

2 large Cream Dory fillet
4 pcs. crabs
500 g prawns
600 g mussels
1 banana hearts, sliced diagonally
3 pieces eggplants, sliced diagonally
2 bundles of pechay
2 bundle of string beans, cut into 2-inch long
4 cloves garlic, minced
1 medium onion,chopped
4 tbsp cooking oil
3-4 cups peanutbutter
Annato/Achiote seed for color
6 cups water or broth
salt and pepper to taste

  • In a large pot with a steamer insert over medium heat, bring the water to a boil. Season with salt and pepper. Steam the seafood. Once cooked, cut the crabs in half. Slice the cream dory into big cubes. Set aside. Reserve the steaming liquid.
  • Meanwhile, heat oil in a large pot then saute the annato seeds for 2 minutes until the oil acquires a deep reddish-orange color. Strain out seeds. Saute onions and garlic until onions are translucent. Add water or steaming liquid.
  • Stir in peanut butter, salt, and pepper to taste. If using, mix cornstarch and water together then add to the pot to thicken. Stir and cook until thickened.
  • Add the string beans, banana heart, and eggplants, and simmer until these are half cooked. Add the steamed seafood except for cream dory. Simmer for 5 minutes.

  • On the same pan, pan fry the squid using the remaining oil for 2 minutes per side. Do not overcook the squid as it will get tough. Remove the squid from the pan and set it aside.
  • Pan fry the steamed crabs on the same pan for 2 1/2 minutes per side. Add more oil if needed. Set aside.
