Steps:

  • Place the fish in a greased 11x7-in. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork; cut into 1-in. pieces., In a large skillet, saute green pepper and onion in oil until crisp-tender. Stir in the tomato, salt, garlic powder, cumin and pepper; cook and stir for 1 minute. Add fish; heat through. Spoon filling on one side of tortillas. Sprinkle with cilantro; fold in half.

Steps:

  • Toast 12 small tortillas. Lay tortillas out on counter. Line each tortilla with a piece of lettuce and spread the fish on top. Cover with 2 tablespoons of cucumber relish, a dab of avocado, a tablespoon of sweet peas, a few slices of radish and a pinch of cilantro. Finish each with a squeeze of lime and a teaspoon of olive oil. Serve immediately.

1/2 recipe corn tortillas
6 leaves green leaf lettuce, washed and halved
2 pounds cooked lobster or crabmeat, shrimp and salmon (preferable poached)
1 1/2 cups Citrus Cucumber Relish, recipe above
1/2 avocado, peeled, seeded and mashed
1 cup sweet peas, blanched
1/2 bunch red radishes, washed, trimmed and thinly sliced
1/2 bunch cilantro, leaves only, roughly chopped
2 limes, halved

Steps:

  • For the salmon, combine all the ingredients, except the avocado and seaweed, in a bowl and mix well. Cover and leave to marinate in the fridge while you prepare the other ingredients.
  • For the prawns, heat the olive oil in a pan over a high heat. Add the garlic, ginger, spring onions and chilli, stirring into the oil for 20 secs. Add the prawns and stir constantly until cooked through and pink. Remove from the heat and stir through the lime zest and juice.
  • Stir the avocado into the salmon and warm the taco shells following pack instructions. Fill each taco with the prawns or the salmon. Top the salmon tacos with the seaweed and the prawn tacos with coriander and extra spring onions. Squeeze over lime wedges to serve.

  • In medium bowl, combine shrimp, taco seasoning, garlic and 2 T. lime juice; toss to coat.
  • Heat oil in large skillet over medium high heat.
  • Add shrimp mixture; cook and stir 2 to 4 minutes or until shrimps turn pink.
  • Remove shrimp from skillet; place on plate.
  • cook remaining juices in skillet for 3 to 4 minutes or until thickened, stirring occasionally.
  • Return shrimp and coat with juices.
  • Remove from heat.
  • In small bowl, toss avocado with remaining lime juice.
  • Spoon shrimp mixture into taco shells.
  • Top with lettuce, avocado and tomato.
  • Serve with salsa.

In a small bowl combine oregano, cumin, 1/8 teaspoon of the salt, and the cayenne pepper. Add half of the spice mixture and half of the garlic to each bowl; toss gently to coat.
  • Coat a large nonstick skillet with cooking spray; heat skillet over medium heat. Add fish; spread in an even layer. Cook, without stirring, for 2 minutes. Add crabmeat. Cook for 2 to 3 minutes more or until fish flakes easily when tested with a fork and crabmeat is heated through, gently stirring occasionally.
  • In a small bowl combine sour cream and lime peel; set aside. In a medium bowl combine cabbage, mango, avocado, green onions, and jalapeño pepper. For dressing, in a small bowl combine lime juice, oil, black pepper, and the remaining 1/8 teaspoon salt. Pour dressing over cabbage mixture; toss gently to coat.
  • To assemble, spoon fish mixture onto half of each warm tortilla. Top with cabbage mixture and cilantro. Fold unfilled half of each tortilla over filling. Serve with sour cream mixture and, if desired, lime wedges.
