SAUTEED BABY OCTOPUS
My husband bought Baby Octopus on a whim and I couldn't find a recipe that I wanted to try. So, we tried sauteing them in garlic and herbs. They turned out really good, first time cooking the little suckers, so my technique might be weird. Also, next time I might try using white wine. NOTE: I didn't measure the garlic and herbs, so what I wrote down is a very loose calculation.

Steps:
- Rinse octopi in running water. Cut head lengthwise and remove excess matter including the beak. **We separated the heads from the bodies on some of the octopi
- Add lemon juice to Octopi as they're waiting to be cooked.
- Heat olive oil in large skillet. Add minced garlic and cook until browned.
- Add Octopi and sprinkle with herbs and salt.
- Cook, stirring occasionally, over medium heat, until octopi is firm and turn purple. **I cooked mine for about 7 minute Like I said, I don't know if that was too long, since it was my first time, but better be safe than sorry when it comes to cooking seafood.
- Cover and cook the final minute if needed.

SEASONED BABY OCTOPUS (CHUKA IIDAKO)
I found these at a market in Hawaii last year and really liked them. When I got home I tried to find a recipe for them on the web.There doesn't seem to be one. With a little trial and error I came up with this recipe and it is pretty close to the real thing. Give it a try. Hope you like it.

Steps:
- Combine all of the ingredients.
- Marinate for 4 to 6 hours in the refrigerator.
- Strain out the octopus. Reserving the marinade.
- In a wok or large sauce pan bring the reserved marinade to a boil.
- Turn the heat to low and allow the sauce to cool slightly.
- Add the octopus and cook slowly for 2 to 4 minutes.
- The octopus are done when they firm up and the tentacles curl.(Be careful not to over cook or they will get tough and rubbery.).
- Remove the octopus from the sauce. Discard the sauce.
- Place octopus in a bowl with a tight fitting lid. Refrigerate. They are best served cold in my opinion.
- Enjoy!

GRILLED BABY OCTOPUS

Steps:
- Boil octopus in salted water until cooked through (check inside with a paring knife), 15 to 20 minutes. To a metal bowl add oil, oregano, pepper flakes, garlic, lemon juice, parsley, salt and pepper, then add octopus and toss.
- Preheat a grill to high heat.
- Place octopus on the grill for 3 to 4 minutes, then transfer back to bowl and back to grill. Repeat this step a few times. Finally, put octopus back in bowl and add balsamic vinegar. Toss well, then serve over baby greens.
BBQ GARLIC OCTOPUS
I felt like some baby octopus but didn't find a recipe that appealed to me tonight so thought I'd post this original one that came out well. I've listed ingredients for a single generous serve which is all I was making but you can obviously scale it up easily.

Steps:
- Bring water to boil in a small covered saucepan.
- Place octopus in saucepan, cover and reduce heat to medium-high and cook for 10 minutes. This is a lazy way to steam / boil them.
- Remove from heat and drain remaining water using the lid.
- Add olive oil, garlic, parsley, oregano and squeeze the lemon over the top and mix together.
- Place on preheated medium BBQ grill plate and cook around 2 minutes with the head facing down and around 5 minutes with the tentacles facing down.

SIMPLE PESTO MAYONNAISE
I first tried Pesto mayonnaise when we were at our granddaughter's ski meet. She had a sandwich with it on it--delicious. When I got home I got some fresh basil and made some Pesto so we could have the mayonnaise. Lots of work. One day I wanted some and didn't have fresh basil--guess what? This is a yummy substitute and you can have it anytime, and it is so easy and takes only a couple of minutes. I only make enough for a few sandwiches; then make again next time.
