Remove from heat; stir in butter, sesame oil, and baking soda (mixture will bubble up).

SESAME POPCORN
my most requested recipe! I take it to parties and potlucks, and I have to make it in such quantity that I bring it in paper grocery bag! Simple, easy, healthy, and economical.

Steps:
- Toast sesame seeds in a skillet on the stove until just golden. Crush them up with the salt in a mortar and pestle. This is an important step to get the seeds to release their yummy flavor and smell. If you don't have one of those, improvise, I used to use a coffee cup and the end of my whisk!
- Put oil in a heavy cookpot that has a lid and place on the stove on high.
- Add popcorn and put the lid on. Stay close by!
- When popping slows to about a second in between pops, dump the popcorn into a large bowl.
- Sprinkle with crushed sesame seeds and salt, pepper, and onion powder. Toss, and enjoy! Add more of the seasonings to your taste, other options are chili powder, garlic, curry.

RED HOT CHILI AND SESAME OIL POPCORN
I got a little creative one day and came up with this variation on my favorite snack, and I've made it frequently since. I make this on the stove top in an ordinary pan, but you could use an old-fashioned stove top popper. Don't use a Teflon coated pan or one with a shiny interior that you want to keep pretty.

Steps:
- Put vegetable and sesame oils in a large pot with a lid, and begin to heat on high heat.
- When the oil is warmed, but not yet hot, add the unpopped popcorn, and immediately shake red hot chili oil onto the popcorn kernels.
- Cover the pan and begin shaking immediately, holding the lid down and protecting your hands with potholders. Shake the pan until the popping slows. (I like to slightly raise the pan off the burner, shake the pan in a swirling motion, set it back down, then about two seconds later pick it up and shake it again, and so on.).
- Transfer the popped corn to a bowl right away and salt to taste.

- Pop the popcorn: First, place a large mixing bowl near the stove. Pour the oil into a large, heavy-bottomed pan with a lid. Turn the heat up to medium, add 2 kernels of corn, and cover. Once the kernels pop, remove the lid and pour in the remaining popcorn kernels. Cover the pot and give the pot a little shimmy to distribute the kernels evenly.
- Cook over medium heat, shaking the pot occasionally. Crack the lid just a smidge so the popcorn stays crisp, and cook until the popping sound slows to about one pop per every few seconds. Remove the pan from heat and dump the popcorn your bowl, taking care not to pour in any unpopped kernels at the bottom of the pot. If necessary, pick out any unpopped kernels that made it into the bowl with a spoon.
- Meanwhile, to make the sauce: In a small, heavy-bottomed saucepan, bring the maple syrup to a boil over medium heat. Keep a watchful eye on the syrup and continue boiling for 2 minutes and 30 seconds, reducing heat only if necessary to prevent overflow. Remove the pot from heat.
