HONEY SESAME TILAPIA

This recipe was published in the food section of The Milwaukee Journal Sentinel. Unfortunately, I can't give proper credit because after trying the recipe once, it went into our family favorites cookbook and I tossed the clipping. My kids all love it, and every guest who has tried it has asked me for the recipe. Note: The recipe calls for sesame sticks, which are a snack food, found in most grocery stores, health food stores and nut specialty shops. Please don't try using sesame seeds instead, as I suspect one reviewer has done, or your results may not be as wonderful. :o)

Honey Sesame Tilapia image

Steps:

  • Wash and pat dry tilapia.
  • In shallow bowl, mix together mustard, honey, soy sauce, and sesame oil.
  • Place sesame sticks in food processor and crush until it resembles coarse sand. Place in large shallow bowl.
  • Brush each tilapia fillet on both sides with honey-mustard mixture, then coat with crushed sesame sticks.
  • Place coated fish on a non-stick or lined baking tray and bake at 375 degrees for 15 minutes.

2 tablespoons tangy sweet mustard
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon sesame oil
2 cups sesame sticks

STEAMED WHOLE TILAPIA

This is a recipe that appeared on a card at my local ShopRite, and the card states it comes from a magazine named Simply Seafood. It works best with an Asian bamboo steamer or equivalent. The card states the recipe is also delicious with trout, rockfish, and small striped bass. I haven't tried these fishes in this dish. According to the recipe, a whole tilapia is prepared, but filets can definitely be adapted!

Steamed Whole Tilapia image

Steps:

  • Scale and gut the tilapia (or have your fishmonger do this).
  • Make 3 or 4 shallow slashes on each side of the fish, to absorb the marinate.
  • Mix soy sauce, ginger, sesame oil, garlic and peppers. Rub a small portion of this sauce into the fish, including into the slashes.
  • Add shredded cabbage and scallion to the remainder of the sauce, and mix.
  • Layer cabbage onto a heat-resistant plate which will fit into your steamer, and place the fish atop the cabbage. Put the plate into the top portion of the steamer.
  • In the bottom of the steamer, pour three inches of water. Set steamer over range on high, and allow water to boil. When the water is at boiling, put the steamer basket over the lower portion, and cover.
  • Steam fish until it has just turned opaque, approximately 15-20 minutes.
  • Serve, and sprinkle sesame seeds atop.

Steps:

  • Stir the orange juice, soy sauce, sesame oil, sugar, garlic, and ginger in a 9x13 inch baking dish until combined. Add the tilapia fillets, turning once to evenly coat. Cover the dish with plastic wrap, and marinate in the refrigerator at least 30 minutes.
  • Preheat an oven to 425 degrees F (220 degrees C).
  • Remove the plastic wrap, and bake in the preheated oven until the fish flakes easily with a fork, 9 to 11 minutes.
