SHAGHRIA BI LABAN WA SNOBAR

People used to make 1-inch-long vermicelli by rolling tiny pieces of dough between their fingers. Make it by breaking dry vermicelli in your hand.

Shaghria bi Laban wa Snobar image

Steps:

  • Cook the vermicelli in plenty of boiling water with the crumbled bouillon cubes until just tender, then drain. You may not need to add salt to the water, because of the saltiness of the cubes.
  • For the sauce, mix the yogurt with the garlic and a little salt.
  • For the topping, fry the pine nuts in the oil, shaking the pan, until lightly colored all over.
  • Serve the vermicelli with the yogurt poured over and sprinkled with the pine nuts.
  • Instead of the pine nuts, heat 4 tablespoons olive oil with 2 teaspoons paprika and dribble over the yogurt.

14 ounces dry vermicelli, broken with your hand into 1-inch pieces
2 chicken bouillon cubes
Salt
2 cups plain whole-milk yogurt, at room temperature
2 or 3 cloves garlic, crushed (optional)
2/3 cup pine nuts
1 tablespoon vegetable oil

SHERRIED BLACK BEAN SOUP

When I was first introduced to the Mexican author Laura Esquivel, I didn't realize who she was. After one of NTWH's performances, she told me she wanted to write on our behalf. "Are you a writer?" I queried. Much to my embarrassment, in her humility she simply answered "Yes." A fellow Jesuit whispered into my ear, "Dunderhead, she's the author and screenwriter of Like Water for Chocolate." We have since become great friends. She cooks for me often, and shows me the warmth and love of all of Mexico from her kitchen. This Sherried Black Bean Soup has a Mexican tang.

Sherried Black Bean Soup image

Steps:

  • In a large, heavy saucepan, bring the beans and 4 cups of water to a boil. Boil briskly for 2 minutes, then remove from the heat and let stand, covered, for 1 hour.
  • In a 5-quart Dutch oven, melt the butter. Add the onions, celery, carrot, and garlic, and cook until soft but not browned. Add the ham hock, the remaining 4 cups water, parsley, salt, cayenne pepper, cloves, mustard seed, bay leaf, and beans (with their liquid). Bring to a boil, cover, reduce heat, and simmer for about 3 hours.
  • Remove the ham hocks and let cool slightly. Remove and discard bay leaf. Place about half of the beans with about 1 cup of the liquid from the soup in a blender or food processor. Process until smooth. Return the puree to the soup in the Dutch oven.
  • Remove the ham from its bone and add the meat to the soup. (Discard fat, bones and skin.) Reheat the soup over medium heat. Stir in the sherry. Serve hot soup with choice of garnishes to sprinkle on top.

1 pound dried black beans, rinsed and drained
8 cups water
2 tablespoons butter or margarine
2 medium onions, chopped
1 stalk celery, thinly sliced
1 medium carrot, shredded
1 clove garlic, minced or pressed
1 ham hock (about 1 pound)
1/4 cup chopped fresh parsley leaves
1 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon whole cloves
1/8 teaspoon mustard seed
1 bay leaf
1/3 cup dry sherry
Thinly sliced green onions, crumbled crisp bacon, sour cream, sieved hard-cooked egg, and thin lemon slices, for garnish

My Shabbat Challah is something out of this world. I made it up on my own, because the ones I tasted, I just didn't like. Try it you will love it!! This can make 6 regular sized loaves, or two large braided loaves.

Steps:

  • In a large bowl, sprinkle the yeast over the water. Let stand for about 5 minutes to dissolve the yeast. Stir in the salt, sugar, oil and 4 eggs until well blended. Gradually mix in the flour. When the dough becomes too stiff to stir, turn it out onto a floured surface and knead for 8 to 10 minutes. Place dough underneath the bowl to rise until double. Or, you can place the dough in the bowl, and cover with a towel.
  • Punch down the dough, and divide into 6 or 8 even pieces depending on what shape you want. Remember to take a small piece off and make a blessing (Jewish law). Roll the pieces into ropes. Braid into two loaves, or one really big 6 piece braid - but only if your oven is large enough. Or, you can make the spiral shape challahs out of each rope. Tuck the ends under, and place on a baking sheet to rise until your finger leaves a small dent when you gently poke the bread.
  • Preheat the oven to 400 degrees F (200 degrees C). Whisk together the remaining egg, water and vanilla sugar. Brush over the tops of the loaves. Sprinkle sesame seeds over the top.
  • Bake for 35 to 40 minutes in the preheated oven, until the bread is deep golden brown. Wrap the small piece of dough that was blessed in aluminum foil, and burn in the oven as an offering while the other loaves are baking.

Shorba Baidha, literally means white soup. It is a classic soup in Algeria & is extremely simple to make. The subtle flavours work well together to make a delcious, light soup. Shorba Baidha - Algerian Chicken Soup. image

Steps:

  • In a large pot gently fry the onion in the olive oil. Add the chicken & the cinnamon stick & fry for 8 minutes, turning the chicken around to seal.
  • Add the water & some salt & pepper to taste. Cover & simmer for 1 hour and 15 minutes on a medium heat.
  • Remove the chicken from the bones & place the chicken back in the pot.
  • Add the chickpeas to the pot & simmer for further 10 minutes covered.
  • Check the seasoning & adjust if required. Add the rice & cover & cook for 15 minutes.
  • Add more water & adjust seasoning or simmer uncovered if the soup is too concentrated or too watery.
  • Finally, mix the egg yolk with the lemon juice. Add a few tsp of the soup to the mix & whisk then add the egg mixture to the pot in a thin steam, stirring continuously. Cook for 1 minute then add the parsley & take off the heat.

2 1/2 liters water
2 inches cinnamon sticks
