Steps:

  • Heat the olive oil in a large skillet, preferably non-stick. Add the garlic and remove when it is about to turn golden. Add the bread cubes and saute over low heat, stirring frequently until the bread cubes have dried out and are somewhat crisp, about 5 to 7 minutes.. The fresher and softer the bread, the more tender the croutons will be. Season with salt and pepper.

2 tablespoons olive oil
1 whole peeled clove garlic
4 slices white bread cut into 3/4-inch cubes
Salt and freshly ground black pepper

Steps:

  • Heat the olive oil in a large (10-inch) saute pan until hot. Add the bread and cook over medium heat, tossing frequently, until the bread is evenly toasted and browned. Sprinkle with salt and pepper.

2 tablespoons good olive oil
2 cups (1/2 inch diced) sourdough bread

SHAVED CROUTONS

This recipe is more about technique than anything. I find these more delicate croutons preferable in a light green salad made with tender young greens or with soup like a cracker. Yu may use any French or Italian bread you prefer. Bag them up and include in a gift basket.

Steps:

  • Heat the oven to 350 degrees.
  • Lay the flat side of the loaf on a cutting board.
  • Cut the thinnest slices you can by using long strokes with the knife.
  • Slicing the "short"way, with more crust to guide the knife makes thin slices easier.
  • Cut off the crusts if you prefer and cut the slices into shapes if you wish, I like them rustic.
  • Toast on a baking sheet until golden brown.
  • Turn them over and toast, watching them closely so as not to burn.
  • Remove from the oven and brush very lightly with olive oil and sprinkle with salt and pepper to taste.
