SHEET-PAN GRILLED CHEESE
Two rimmed baking sheets and a hot oven mimic a giant panini press, making grilled cheese for a crowd a super quick and easy prospect.

Steps:
- Position rimmed baking sheet on a rack in middle of oven and preheat to 450°F. Spread about 1 1/2 tsp. mayonnaise on one side of each slice of bread. Arrange 6 slices, mayo side down, on second inverted rimmed baking sheet. Mound 1/2 cup cheese in the center of each slice, season with salt and pepper, and top each with remaining bread slices, mayo side up.
- Using oven mitts, carefully remove preheated baking sheet from oven and place, rimmed side up, on top of sandwiches, then, holding both rimmed baking sheets together, return to oven. Bake until bread is browned and cheese is melted, about 15 minutes. Carefully remove baking sheets from oven and transfer sandwiches to a cutting board. Cut into pieces and serve.

- Next, spread 1 teaspoon of butter on the outside of two pieces of bread (1/2 teaspoon on each bread slice) and 1/2 teaspoon of mayo on the inside of two pieces of bread (1/4 teaspoon on each bread slice).
- Place two pieces of cheese on top of one piece of bread and top the cheese mayo side down with the other slice of bread and place the grilled cheese on the baking sheet. Repeat steps 2 and 3 until all bread and cheese are gone / all sandwiches are assembled.
- Place the baking sheet in the oven and bake the grilled cheeses for 5 minutes. Flip and bake the grilled cheeses for an additional 2-3 minutes or until the cheese is melted.

- Preheat oven to 425°F with rack in upper third of oven. Place butter on a rimmed baking sheet, and place in preheated oven until butter melts, about 5 minutes.
- Spread goat cheese evenly on 5 of the bread slices. Arrange bread slices with goat cheese and plain bread slices in a single layer in melted butter on baking sheet. Place 1 Cheddar slice on each bread slice with goat cheese, and place 1 slice each of provolone and Swiss on each plain bread slice. Return to oven, and bake at 425°F until cheese is bubbly and bread begins to brown, about 7 minutes.
- Remove from oven, and assemble sandwiches. Return to oven, and bake until bread is golden and toasted, 3 to 4 minutes.
