KNISH

Knish is a classic Jewish comfort food. Sometimes I make tiny appetizer ones, which are a little more like a roll, and I seam on the top. -Marlena Spieler, Waterlooville, England

SPEEDY NO-KNEAD BREAD

The original recipe for no-knead bread, which Mark Bittman learned from the baker Jim Lahey, was immediately and wildly popular. How many novices it attracted to bread baking is anyone's guess. But certainly there were plenty of existing bread bakers who excitedly tried it, liked it and immediately set about trying to improve it. This is an attempt to cut the start-to-finish time down to a few hours, rather than the original 14 to 20 hours' rising time. The solution is simple: use more yeast.

Steps:

  • Combine flour, yeast and salt in a large bowl. Add 1 1/2 cups water and stir until blended; dough will be shaggy. Cover bowl with plastic wrap. Let dough rest about 4 hours at warm room temperature, about 70 degrees.
  • Lightly oil a work surface and place dough on it; fold it over on itself once or twice. Cover loosely with plastic wrap and let rest 30 minutes more.
  • At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6-to-8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under dough and put it into pot, seam side up. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes.
  • Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack.

3 cups bread flour
1 packet (1/4 ounce) instant yeast
1 1/2 teaspoons salt
Oil as needed

CINNAMON RAISIN SWIRL BREAD

You can use any white bread recipe to make any swirl breads listed below. The cinnamon raisin version is a classic, inspired by a recipe from James Beard. The sherry gives an unusual complexity to the sweet raisins and brown sugar, and most of the alcohol is cooked off while the mixture simmers. Feel free to use apple cider instead. This recipe makes two loaves, one to eat right away, preferably warm from the oven, or toasted and buttered the next day. Freeze the other loaf and use it to make what is arguably the best French toast imaginable.

Steps:

  • Make the dough: In a large electric mixer bowl, dissolve yeast in 1/4 cup warm milk. Add the remaining warm milk, the sugar, the salt, the butter and the eggs. Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
  • Grease a large bowl with butter and turn dough out into the bowl. Flip dough over so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 11/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
  • Meanwhile, make the filling: In a small pot, bring sherry to a low boil and simmer until reduced by half, about 8 to 10 minutes. Add raisins, cover and let sit until needed for filling.
  • When dough has doubled in size, turn dough out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
  • Press down dough with your hand to expel the air. Divide dough in half and roll one half into a 16-x-8-inch rectangle. Brush with some of the melted butter. Drain raisins and mix with sugar and cinnamon; scatter half of the mixture over the dough and, starting with the shorter side, roll up tightly into an 8-inch log, tucking the ends under. Place roll seam-side down in a loaf pan and brush top with melted butter; dust with cinnamon sugar if desired. Repeat with second dough half.
  • Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
  • Meanwhile, heat oven to 400 degrees. Bake bread for 10 minutes, then reduce heat to 350 degrees and bake for an additional 20 to 30 minutes, or until loaves sound hollow when tapped, the tops are brown and the internal temperatures are 200 degrees. Remove loaves from pans and let cool on wire racks.

  • Amish Friendship Bread. You can make this gorgeous, fragrant Amish friendship bread with only seven simple ingredients: sugar, butter, eggs, buttermilk, flour, baking soda, and cinnamon.
  • Amish Apple Fritter Bread. Apple fritter bread is hands down one of the most phenomenal homemade bread varieties you’ll ever try. It has a crunchy, crispy outer crust with a sweet, sticky glaze that’s out of this world.
  • Amish Pumpkin Bread. Here’s another tasty bread that takes only 15 minutes of prep work and about an hour to bake. If you’re looking for a simple beginner’s bread that’s ideal for fall, this one is it.
  • Amish Onion Bread. If you’re looking for a homemade Amish bread that’s more savory than sweet, give this Amish onion bread recipe a try. The bread itself is light and fluffy on the inside, but the outside is covered in robust flavors and delightfully crunchy ingredients.
  • Amish Cornbread. This dense, crumbly cornbread is the ultimate in simple homemade bread. If you’ve ever had authentic southern cornbread (the kind with sour cream, extra butter, and just a hint of sugar), then you already know how this tastes, feels, and looks.
  • Amish Biscuits. If you’re a “biscuits for breakfast” kind of person, you’ll undoubtedly want to bookmark this super simple, six-ingredient biscuit recipe.
  • Amish Potato Rolls. If you think thick, fluffy yeast rolls are the perfect dinner roll, just wait until you try these Amish potato rolls. They’ll take a bit of time to make, it’s true, but they are entirely worth the wait.
  • Amish Potato Bread. Amish potato bread is almost as good as Amish potato rolls. In fact, some people might even argue that it’s better. You can use it for practically anything – sandwich bread, toast, PB&J sandwiches, and more.
  • Honey Whole Wheat Bread. Unfortunately, this isn’t one of those quick Amish breads that you can whip up in less than an hour. With prep time, rise time, and bake time, it takes a little over 3 hours from start to finish.
  • Amish White Bread. The actual name of this bread is “no-fail Amish white bread,” and that should give you all the confidence you need, even as a beginner baker, to know you can pull it together.
