SHORBA LIBYA
This is a classic delicious Libyan soup. I found the recipe online while specifically looking for North-African recipes.

Steps:
- Heat the oil in a large saucepan over a medium heat and fry the onions for a few minutes until tender. Add the lamb, chickpeas, tomato puree, spices and salt, and cook for a few minutes more, stirring occasionally.
- Cover the mixture with water, stir, then simmer with the lid on for 30-45 minutes or until the lamb is cooked. Add extra water if required and adjust the seasoning if necessary.
- Stir in the crushed mint about 10 minutes before the end, then squeeze in the lemon-juice just before serving. Serves 4-6.

TRADITIONAL SHORBA
This is the basic Egyptian soup. A traditional Egyptian meal consists of lamb, beef, or chicken, soup, rice, and a vegetable. This is the base soup for almost every Egyptian recipe. A Ramadan winner.

Steps:
- Bring a large pot of water to a boil. Cook chicken in boiling water, skimming any fat, until partially cooked through, 10 to 15 minutes.
- Stir tomato puree, whole onion, bay leaves, cardamom pods, mistika, salt, and pepper into the pot. Cook until chicken is cooked through and tender, about 50 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

SHORBA LIBIYA - LIBYAN LAMB & CHICKPEA SOUP
There are many versions of this Libyan classic, this recipe is the basic recipe, to which other bits & pieces may be added depending on the region & household. Although lamb is traditionally used here, you may also substitute beef or chicken. Shorba is an essential dish during Ramadan as well as throughout the rest of the year.

Steps:
- Heat the oil in a large casserole or stock pot. Gently fry the onion for a few minutes, until pale golden & soft.
- Add the lamb, chickpeas, tomato puree, spices & salt, cooking for a few more minutes & stirring well.
- Add the water to the pot, this should cover the mixture - add 1/4 litre more if required. (If adding extra water, remember that you'll need to add a little extra spice & salt to compensate).
- Cover & simmer over a medium heat for approx 45-50 minutes or until the lamb is tender & the soup flavourful. You may add a little extra water again at this point but remember to adjust the seasoning if you do.
- Add the dried mint & the lemon, return to the heat for a further 3-4 minutes then serve.
- Serve each bowl of shorba with a sprig of fresh mint & a lemon wedge on the side.

- Ghoriba. Traditional biscuits in Libya, and something you shouldn’t miss! I was lucky enough to try some incredibly fresh ghoriba cookies in the city of Gharyan.
- Kebab. For all the meat-lovers out there, kebabs are food in Libya that you will enjoy. These are pieces of marinated meat (lamb, lamb liver or chicken), threaded on a skewer and chargrilled.
- Asida. Asida, also known as flour pudding is one of the most well known and loved foods in Libya. It is often found served during religious holidays and ceremonies.
- Tagine. From my experience of visiting Libya, I’d say that lamb is the number one meat eaten in the country. The Libyan tagine typically uses lamb, or chicken and sometimes just vegetables and chickpeas.
- Bazin. This is a popular unleavened bread in Libya. It is prepared by boiling barley flour and salt in water, then beating it until it forms into a dough.
- Basbousa. Another delicious food in Libya. A sweet cake from semolina flour that has been soaked in rosewater syrup or honey and lemon. Afterwards, it is topped with slivered almonds and shaved coconut.
- Rice Pilaf with raisins and almonds. If you get the chance to eat rice pilaf with raisins and fresh almonds in Libya, do it. The rice for this dish is delicately spiced with cumin, cardamom, and cinnamon.
- Libyan Soup. This soup is fantastic and I consumed many bowls of it during my time in Libya. This Libyan dish is a lamb and vegetable/chickpeas tomato-based soup.
