- Fill 30 quart Stock Pot Half Full with Water and start Heating Pot. I recommend using a Bayou Classic Turkey Fryer, Perforated Basket with Propane Regulator. Add Garlic, Cayenne, Black Pepper, Old Bay Seasoning, Zatarain's Dry and Liquid Boils, Onions and Lemons. Once Boiling Add Potatoes and Carrots. After 5-10 Minutes Add Sausage. Wait 10-12 Minutes and Add Corn. Wait 5-7 Minutes and Add Shrimp. After 5-7 Minutes Drain and Serve.

- in a 12 to 16 quart pot, bring 2 gallons water to boiling.
- Add shrimp or crab boil and Old Bay Seasoning; reduce heat.
- Simmer, uncovered, 10 minutes.
- Add potatoes, a few at a time, allowing water to continue simmering.
- Simmer 7 to 10 minutes, untl nearly tender.
- Add corn; simmer, uncovered, 5 minutes.
- Add sausage and shrimp.
- Simmer 3 to 5 minutes, until shrimp are almost opaque (do not overcook shrimp) and sausage is heated through; drain.
- Transfer to large platter.
- Add lemon halves and sprinkle with parsley.
- Serve hot or within 1 hour of cooking.
- Pass Garlic Mayo and Cocktail Sauce.

- Preheat oven to 400˚F (200˚C).
- In a large pot of boiling salted water, cook potatoes until just tender and parboiled, about 10-13 minutes. Stir in corn during the last 5 minutes of cooking time and drain well.
- In a small bowl, combine butter, garlic, and Old Bay Seasoning.
- Place potatoes, corn, shrimp and sausage in a single layer onto a greased baking sheet. Gently toss with the butter mixture.
- Bake for 12-15 minutes, or until the shrimp are opaque and corn is tender.
- Serve immediately with lemon wedges, and sprinkle with parsley.

- In an 8-quart stock pot, bring Old Bay, salt, water and beer to a boil.
- Add potatoes and onions; cook over high heat for 8 minutes.
- Add smoked sausage; continue to cook on high for 5 minutes.
- Add corn to pot; continue to boil for 7 minutes.
- Add shrimp in shells, cook for 4 minutes.
- Drain cookin liquid; pour contents of pot into several large bowl or shallow pails.

- In a large pot, combine chile, celery, onion, garlic, 1 tablespoon seafood seasoning, and 10 cups water; bring to a boil. Add potatoes and reduce to a rapid simmer. Cook until potatoes are almost tender, about 10 minutes.

- In a large saucepan, bring 12 cups water, cloves bay leaves, cinnamon, mustard and celery and coriander seeds, black peppercorns, paprika and hot pepper flakes to boil.
- Reduce heat and simmer for 5 minutes.
- If using smoked sausage, cut into bite size pieces.
- Add smoked or Italian sausage to pot; simmer for 15 minutes.
- Meanwhile, using scissors, cut through shell along back of each shrimp; remove vein.

- Fill stockpot with 6 qt. water (if using 2 pots, divide ingredients and water between them). Add lemons, bay leaves, salt, peppercorns, and 1/2 cup seasoning, cover, and bring to a rolling boil. Add potatoes, return to a boil, and cook 7 minutes. Add sausage and onions, return to a boil, and cook 5 minutes. Add corn, return to a boil, and cook until corn is cooked and potatoes are tender when pierced with a knife, about 5 minutes more.
- Add shrimp and cook (no need to return to a boil), stirring gently, until shrimp turn pink, about 3 minutes. Remove insert or drain through a very large colander.
- Make the cocktail sauce:
- Stir ketchup, horseradish, Worcestershire, lemon juice, and hot sauce, if using, in a medium bowl.
- Make the lemon-butter sauce:
