BAKED GREEK SHRIMP WITH TOMATOES AND FETA

This traditional Greek recipe disregards the notion that seafood and cheese don't mix, and it works beautifully, resulting in a harmonious balance of flavors. Though it can be made year round with canned tomatoes, it is sensational with fresh sweet ripe ones, so best prepared in summer. Serve it as a main course with rice or potatoes, or in small portions as an appetizer, taverna-style.

Baked Greek Shrimp With Tomatoes and Feta image

Steps:

  • Put 4 tablespoons olive oil in a wide skillet over medium heat. Add shallots and garlic, season with salt and pepper and cook, stirring, until softened, about 5 to 8 minutes. Lower heat as necessary to keep mixture from browning. Remove from heat while preparing tomatoes.
  • Fill a saucepan with water and bring to a boil. Add whole tomatoes and cook for about 2 minutes, until skins loosen. Immediately plunge tomatoes in a bowl of cold water to cool, then drain. With a paring knife, core tomatoes and slip off skins. Cut tomatoes into thick wedges.
  • Heat oven to 400 degrees. Return skillet to stove over medium-high heat. Add tomato wedges and season with salt, pepper and red pepper flakes. Cook, stirring, until mixture is juicy and tomatoes have softened, about 10 minutes. Transfer mixture to a shallow earthenware baking dish.
  • Put shrimp in a mixing bowl. Add 1 tablespoon olive oil, season shrimp with salt and pepper and stir to coat. Arrange shrimp over tomato mixture in one layer. Crumble cheese over surface and sprinkle with oregano.
  • Bake for 10 to 12 minutes, until tomatoes are bubbling and cheese has browned slightly. Remove from oven and let dish rest for 5 minutes. Sprinkle with mint and serve.

Shrimp with Basil, Garlic, and Tomatoes image

Steps:

  • In a medium bowl, toss the tomatoes with the basil and season with salt and pepper, to taste. Set aside while you prepare the shrimp.
  • Divide the shrimp between 2 (8 or 9-inch) pie pans and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pans.
  • Heat 2 large skillets over medium heat, or do this in 2 batches if you only have 1 pan. Season 1 side of the shrimp with salt and pepper. Add enough oil to lightly film the bottom of the pan and turn the heat up to high. Invert the pan of shrimp so they all fall into the skillet(s) at once. Saute the shrimp, undisturbed, until they turn golden brown on the bottom, about 2 minutes. Add a bit more oil and 1/2 the garlic to each pan. Turn the heat off and turn the shrimp over with tongs. Cook the shrimp for 1 minute in the residual heat of the pans. Transfer the shrimp to the bowl with the tomato mixture and toss to combine.   • Peel the tomatoes and liquefy them in the food processor, then measure their volume. It should add up to a little more than 2 1/4 cups.
  • Fry the onion in the oil till soft and lightly colored. Add the garlic and the chili and stir until the aroma rises.

Steps:

  • Melt 2 tablespoons of the butter in a deep, heavy 4-5 quart pan over medium heat; add shrimp and cook, stirring, until almost opaque throughout, about 3 to 4 minutes.
  • Lift out and set aside (shrimp will get more cooking time later).
  • Pour pan juices into a 1-quart measuring cup; add clam juice and enough water to make 2 1/2 cups, set aside.
  • Melt remaining 1/4 cup butter in pan over medium heat; add onion and garlic, cook, stirring often, until onion is soft, about 5 minutes.
  • Add rice and turmeric; cook, stirring for 2-3 minutes, add celery, salt, pepper and clam juice mixture.

Steps:

  • Pat the shrimp very dry and season with salt and pepper. In a large (12-inch) skillet, heat the olive oil over medium-high. Add the shrimp and cook until pink and lightly golden in spots, 1 to 2 minutes per side. Use a slotted spoon to transfer the shrimp to a plate.
  • Add the tomatoes to the skillet, season with salt and pepper, and cook, stirring just once or twice, until they start to blister in spots, 3 to 4 minutes.   • Put 2 cups Basmati rice (or white long grain rice) in a large bowl and rinse with cold water (use your hand to swish the rice around). Repeat a few times and drain the rinsing water, then top the rice with cold water again, this time leave it to soak for 15 to 20 minutes. (You should be able to break a grain of rice easily once done soaking, if that's not the case leave it for a bit longer). Drain well.Tip: Use the time while the rice is soaking to prep the veggies
  • In a large, deep pan with a lid (I used this 5-quart pan--affiliate link), heat 3 tablespoons extra virgin olive oil over medium heat. Add 1 cup each chopped red onion and red bell pepper. Add minced garlic, 1 cup peas, and a good amount of chopped fresh parsley (about 1/2 cup packed). Add a good pinch of kosher salt and cook for about 3 minutes to give the veggies a chance to soften a bit, then add the spices (1 tsp coriander 3/4 tsp to 1 tsp Aleppo pepper flakes (or a mild red pepper), ½ tsp cumin, ½ tsp paprika, ¼ tsp ground turmeric). Toss around and cook a couple more minutes so the spices release their flavor.
  • Add the drained rice. Toss to combine and season with a big pinch of kosher salt. Add the water and bring to a boil until the liquid is reduced by about 1/2. Watch the liquid amount, it should not dry out but it should be just covering the top of the rice. At this point, turn the heat to low, cover the pan well with the lid and leave it alone for 15 to 20 minutes or until the rice is cooked.
  • When the rice has fully absorbed the water, taste to be sure it's fully cooked (it should not be hard nor chewy). Add the shrimp, nestling it into the rice.
