SEAFOOD PIZZA
Bored with the same old "cardboard" pizza? Well, you'll enjoy making this herbed shrimp and scallop treat.

Steps:
- In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough remaining flour to make dough easy enough to handle.
- Turn dough onto lightly floured surface; knead about 10 minutes or until smooth and elastic. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover and let rise in warm place 20 minutes.
- Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours, deflating dough occasionally.
- Move oven rack to lowest position. Heat oven to 500°F. On lightly floured surface, press or roll dough into 12-inch round. Place on ungreased pizza screen or in 12-inch perforated pizza pan. Press dough from center to edge so edge is thicker than center.
- Peel shrimp, leaving tails intact. Spread pizza sauce over dough to within 1/2 inch of edge. Sprinkle cheeses over sauce. Arrange shrimp, anchovies and scallops on cheeses. Sprinkle basil, pepper and garlic over seafood. Bake about 10 minutes or until shrimp are pink and firm, scallops are white and cheeses are melted.

SEAFOOD PIZZA
I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

Steps:
- Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

Creating a pizza for the Quisine Queens (Zaar World Tour #2) was not as tough a challenge as some might expect. Diverse interests and backgrounds reulted in a tasty pizza! Steps:
- Preheat pizza stone in oven at 450°F Brush olive oil over crust and spread with prepared pizza sauce. Sprinkle on basil, oregano, red pepper flakes, pepper and garlic.
- Distribute shrimp, mushrooms, olives and onions over pizza.
- Combine 3 cheeses and sprinkle evenly over pizza.
- Bake for 10 minutes.
- Add toppings of your choice at table (do try to have some arugula and chili oil to drizzle over) and enjoy!

SHRIMP OR LOBSTER GOURMET PIZZA
Gourmet pizza at home. My kids declared it the best pizza they have ever eaten anywhere! Prep time includes allowing the dough to rise.

Steps:
- Dough: dissolve yeast in water in a large bowl. Allow to set for a few minutes until it begins to foam.
- Add sugar, salt, oil and 1 1/2 c flour and stir gently to combine. Add remaining flour and combine thoroughly. (I usually knead it a little in the bowl too.).
- Let rest for about 30 minutes. Pat out onto large, greased pizza pan.
- While dough is resting, mince garlic and mix with olive oil and allow to set to infuse flavor throughout.
- Spread oil and garlic over entire crust. Sprinkle with Parmesan cheese. Layer the shrimp or lobster meat, tomato, basil and mozzarella as desired and sprinkle with black pepper to taste.
- Bake at 400°F for 20 minutes.
TIM'S SEAFOOD PIZZA
Steps:
- Preheat oven to 200 degrees F (95 degrees C).
- Place garlic in a small stainless steel bowl; drizzle with 1 tablespoon olive oil and cover with aluminum foil.
- Bake in the preheated oven until tender and browned, about 1 hour. Remove and chop garlic. Increase oven temperature to 375 degrees F (190 degrees C).
- Grease a 10x12-inch pan with the remaining olive oil; sprinkle lightly with garlic salt. Place crust onto the pan.
- Mix spinach, mayonnaise, and Parmesan cheese together in a bowl. Spread mixture over the pizza crust.
- Sprinkle chopped roasted garlic along the edges of the crust. Cover with 1/2 the Italian cheese blend. Add lobster and shrimp. Sprinkle on onions on top and the remaining Italian cheese blend. Finish with olives. Drizzle with the remaining oil; sprinkle seafood seasoning, salt, and pepper on top.
- Bake in the preheated oven until crust is golden brown and lobster and shrimp are opaque, 10 to 12 minutes.

LOBSTER AND SHRIMP BISQUE
Steps:
- In a large (5-to 6-quart) kettle combine water and 1 cup wine and bring to a boil. Plunge lobsters into liquid headfirst and return liquid to a boil. Simmer lobsters, covered, 9 minutes. With tongs plunge lobsters immediately into cold water to stop cooking, reserving cooking liquid.
- Working over a bowl to catch the juices, twist off tails and claws and reserve juices. Discard tomalley, head sacs, and any roe and remove meat from tails and claws, reserving it separately.
- To reserved cooking liquid add lobster shells, reserved lobster juices and shrimp shells, 1 onion, quartered, 1 cup fennel, half of carrots, celery, 1 bay leaf, thyme, parsley, peppercorns, and zest. Simmer mixture gently, uncovered, skimming froth occasionally, 1 1/4 hours.
- Strain stock through a large sieve set over a large bowl and pour into cleaned kettle. Boil stock until reduced to about 6 cups and return to bowl. Stock, cooked lobster, and shelled raw shrimp keep, covered separately and chilled, 1 day.
- In a kettle cook remaining onion, chopped fine, remaining 1 cup fennel, remaining carrots, remaining bay leaf, garlic, and salt and pepper to taste in oil over moderate heat, stirring, until vegetables are softened.
- Add remaining 1/2 cup wine and boil until mostly evaporated. Add saffron, tomatoes, and shellfish stock and simmer, covered, 20 minutes. Add shrimp and reserved lobster claw meat (reserving tail meat) and simmer 2 minutes, or until shrimp are cooked through. Remove soup from heat and remove 6 shrimp, reserving them. Discard bay leaf.
- In a blender purée soup in batches until smooth, transferring as it is puréed to a very fine sieve set over a saucepan. Force soup through sieve, pressing hard on solids, and whisk in cream, Pernod, and salt and pepper to taste. Heat bisque over moderate heat until hot (do not boil) and stir in lemon juice.
- Chop fine reserved shrimp and lobster tail meat and divide among heated soup bowls. Ladle soup over shellfish and garnish with reserved fennel fronds.

- Preheat oven to 450°. In a small bowl, combine shrimp, water and lemon juice. Let stand 10 minutes., Meanwhile, in a large skillet, heat butter over medium-high heat. Add mushrooms, onion and pepper; cook and stir 4-5 minutes or until tender. Add garlic and salt; cook 1 minute longer., Drain shrimp, discarding liquid. Spoon shrimp mixture over sauce; sprinkle with cheese. Bake 8-10 minutes or until crust is golden and cheese is melted.
