'SHRIMP COCKTAIL ASPIC'
I have enjoyed this recipe at every Holiday meal for the past 25 years. My Mother-in-Law used to make it and now that she is gone I carry on the tradition. I took her recipe and added the chopped green onion to it. This dish tastes like a delicious shrimp cocktail...the lemon jello really perks up the flavors in this...

Steps:
- 1. Dissolve jello in the boiling water. Cool to room temperature. In medium mixing bowl stir together tomato soup, tomato sauce and olives until well blended. Stir in cooled jello, then stir in green onions and shrimp.
- 2. Pour mixture into a 13 x 9 pan or for a special presentation use cocktail glasses rimmed with chopped parsley. Chill until set.
- 3. Enjoy this at YOUR Holiday Gathering!!!

- Heat the oven to 500.
- Put 1 1/2 pounds peeled shrimp and 1 pint cherry tomatoes in a roasting pan; toss with olive oil.
- Roast, turning the shrimp once, until they're pink all over, 10 to 15 minutes.
- Mash the tomatoes in a bowl. Add 2 tablespoons olive oil, lemon juice, Worcestershire, horseradish and hot sauce.
- Dip in warm sauce

- Combine tomato juice, clam juice, vinegar, cilantro sprigs, chilies and Worcestershire sauce in medium saucepan. Boil until sauce is slightly thickened and reduced to 1 2/3 cups, about 30 minutes. Strain into medium bowl.
- Heat oil in large nonstick skillet over medium-high heat. Add shrimp and sauté until just cooked through, about 4 minutes. Cool.
- Add shrimp, tomato, green onions, chopped cilantro, lime juice and sugar to sauce. Season with salt and pepper. Chill until cold, at least 3 hours. (Can be made 1 day ahead. Cover and keep chilled.) Garnish with lime wedges.

- Heat 2 tablespoons olive oil in heavy large skillet over medium heat. Add shrimp; sprinkle with salt and pepper. Sauté shrimp until just opaque in center, about 3 minutes. Transfer shrimp to large bowl. Add lime juice and lime peel to skillet. Using wooden spoon, scrape up any browned bits. Pour lime mixture over shrimp in bowl. Add onion, chile, garlic, and remaining 2 tablespoons olive oil to shrimp mixture; stir to blend. Let shrimp marinate 30 minutes. Add tomatoes, olives, and cilantro. Cover and refrigerate at least 1 hour and up to 2 hours.
- Divide cocktail mixture among Martini glasses; garnish with lime wedges.
