SHRIMPIE'S
I like to cut the english muffins in half then each half into quarters before I spread the mixture on top. I also like to flash freeze them on a cookie sheet until frozen completely and then put in a zip lock bag and then put back into the freezer so you can take out the amount you wish to use without having to cook them all at once. I broil mine from the frozen state.

Steps:
- Mix first 5 ingredients together well.
- Then put a good teaspoon of mixture on each english muffin quarter.
- Broil until cheese mixture is bubbling and slightly browned on top.
- Serve Hot.
- Watch these disappear before your eyes as your guests devour them!

FESTIVE LAYERED SHRIMP DIP
The original version of this tasty recipe came from the Mobile Register newspaper, but has been changed slightly by the friend who brought it to my house for a Thanksgiving appetizer and now by myself. Serving in a deep-dish pie plate works well. Serve with Frito Scoops. Gobbled up by guests at a recent Christmas party. Prep time assumes having to peel and devein fresh shrimp. Tedious, but I never buy frozen. Cooking time noted is for the shrimpies...don't overcook! Don't add to the pot until the water is boiling. When you take them out of the pot dunk in cold water to stop the cooking process and prevent them from getting tough. Enjoy!

Steps:
- In medium bowl, mix cream cheese, lemon pepper, Worcestershire sauce, mayo or yogurt and lemon juice until smooth; spread evenly over bottom of the pie plate.
- In a small bowl, mix the horseradish into the cocktail sauce; spread evenly over cream cheese mixture.
- Evenly distribute the shrimp over the cocktail sauce.
- Top with the two cheeses.
- Garnish with the chopped green pepper and the chopped tomato.
- Cover and refrigerate until ready to serve.

- In a large frying pan or wok,heat oil.
- Add shrimps and saute until pink.
- Remove from heat.
- In a medium bowl combine all other ingredients.
- Return shrimp to heat.
- Pour sauce over shrimp and mix well,heat just until sauce is hot, about 2 minutes.

SHRIMP & CHEESE APPETIZERS
Quick easy and attractive "do Ahead" appetizer They freeze well Instead of the English muffins I use 8 slices of Whole wheat bread, sandwich loaf, crusts removed. Then flatten the slices with a rolling pin, put the slices on a cookie sheet and toast one side of the bread under the broiler. Then turn the bread over and spread the mixture on each slice. Cut the slices into 3 pieces each. If you want to use the English muffin but want them a bit thinner use 3 muffins and cut them into 3 pieces each

Steps:
- Beat together the cheese, butter, mayo, lemon juice, cayenne,& onion powder.
- Beat until smooth then add shrimp and mix until they are evenly spread.
- Spread on the 8 muffin halves.
- You may now freeze them well wrapped or continue to broil them.
- Broil until lightly browned & bubbly.
- Cut each muffin half into 6 pieces & serve.
- If you have frozen them defrost for 1/2 hour then under broiler apprs 8" from heat for 10-15 minutes.
