SHRIMP PANANG
Hollywood stars are notorious for keeping strict diets, so you'd think that cooking for celebrities would be a giant headache. But that's how chef Gary Arabia has built his whole career: He's been catering in Los Angeles for more than 30 years-awards shows, movie sets, you name it. The main request by Modern Family's Sofia Vergara and fiance Joe Manganiello for a recent party was just to keep the food "lean, mean and fresh," Gary says. This shrimp dish turned out to be Manganiello's favorite of the night; the chef used curry paste to amp up the flavor without adding extra fat. We asked him to share the recipe so you can make it for your own big night.

Steps:
- Preheat a grill to medium high. Toss the shrimp with the olive oil and Thai seasoning in a bowl. Thread onto skewers and grill until marked and just cooked through, 1 to 2 minutes per side. Set aside.
- Heat the vegetable oil in a medium skillet over medium-high heat. Add the garlic, red onion and curry paste and cook, stirring, until the onion is just softened, about 1 minute. Add the coconut milk, fish sauce and chili powder; cook until reduced by half, about 3 minutes. Add the heavy cream and bring to a simmer. Cook, stirring constantly, until thickened, about 3 minutes.
- Divide the sauce among 4 plates. Arrange the shrimp on top and garnish with snow peas.
SHRIMP (PRAWN) SAN CHOY BAU
Russell cooked this for my birthday dinner last night-along with Tom Yum Soup. We managed to eat a whole recipe between the two of us. What a feast! I'm sure it would feed 4-6 with another dish, or as an appetiser in a Chinese meal.

Steps:
- Wash the lettuce and separate the leaves.
- Shake off any excess water and dry thoroughly on paper towels.
- Combine soy sauce, oyster sauce and lime juice in a small bowl.
- Set aside until needed.
- If the shrimp are large, cut into smaller pieces.
- Heat a wok over high heat, add the vegetable and sesame oils and swirl to coat the side of the wok.
- Add spring onion, garlic and ginger and cook for 30 seconds.
- Add the shrimp meat, water chestnuts and chilli, season with salt and freshly ground black pepper and continue to stir-fry for 2 more minutes.
- Add the rice, sprouts and cilantro and stir until combined.
- Pour in the set-aside stir-fry sauce, toss briefly, then remove the wok from the heat.
- Transfer the mixture to a serving bowl.
- Place the dry lettuce cups on a plate.
- Either fill the lettuce cups with the mixture yourself, or allow your guests to do so at the table.
- Serve with hoisin sauce, to be drizzled over the top.

SHRIMP SCAMPI KABOBS
These garlicky and lemon-kissed shrimp kabobs are sure to be a hit at your next cookout. Be sure to marinate the shrimp for just 30 minutes, otherwise the acid from the vinegar and lemon juice could make the shrimp mealy if they marinate too long.

- Stir together the oil, tarragon, parsley, Dijon, honey, vinegar, whole-grain mustard, garlic and lemon juice in a large bowl. Add the shrimp and toss to coat well. Cover and refrigerate 30 minutes.
- Remove the shrimp from the marinade, reserving the marinade. Thread the shrimp alternately with the lemon slices onto skewers. Sprinkle the shrimp lightly with salt and pepper.
- Pour the marinade into a small saucepan. Bring to a boil and simmer 5 minutes or until very hot. Reserve the marinade for serving.
- Preheat a grill to medium-high heat. Grill the shrimp kabobs until cooked through, 2 to 3 minutes on each side. Transfer to a platter and garnish with fresh parsley. Serve with the reserved marinade.
