Sicilian Pasta Fasul' - Pasta and Beans Recipe - (4.3/5) image

Steps:

  • HEAT the olive oil and butter. SAUTÈ the garlic, onions, green pepper. ADD spices. ADD 2 quarts chicken broth; reserve one for later. WHEN BOILING ADD the macaroni WHEN SHELLS ARE AL DENTE (medium soft, not flabby)add beans with juice. Salt to taste. Serve with shredded parmigiano cheese, salad, and crusty Italian bread.

1/3 cup olive oil
1/2 stick ot butter (1/4 lb.)
4 cloves of garlic, chopped fine
2 medium onions, diced 1/2 inch
1 green pepper (cut in strips: 3/4" x 1/4")
1 teaspoon fresh oregano chopped, 1/2 teaspoon dried
1 teaspoon fresh basil chopped, 1/2 teaspoon dried
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
3 quarts of chicken broth or fortified chicken stock
1 lb. medium shell macaroni
2 14 oz. cans of Progresso cannellini (small white kidney beans) with juice

PASTA FAZOOL (PASTA E FAGIOLI)

This classic Italian-American comfort food works with any kind of sausage, but I like the fennel and anise flavors of sweet Italian sausage with the beans--it's a hearty soup that's fast and easy to put together.

Pasta Fazool (Pasta e Fagioli) image

Steps:

  • Heat oil in a skillet over medium-high heat. Brown sausage while breaking it into small pieces, about 5 minutes. Reduce heat to medium. Add diced celery and chopped onion. Cook until onions are translucent, 4 to 5 minutes. Add dry pasta. Cook and stir 2 minutes.
  • Stir in tomato paste until evenly distributed, 2 to 3 minutes. Add 3 cups broth. Raise heat to high and bring to a simmer. Add salt, black pepper, pepper flakes, and oregano. When soup comes to a boil, reduce heat to medium and let it simmer about 5 minutes, stirring often. Check soup consistency and add more broth, if needed.
  • Place chopped chard in a bowl. Cover with cold water and rinse the leaves; any grit will fall to the bottom of the bowl. Transfer chard to colander to drain briefly; add to soup. Cook and stir until leaves wilt, 2 to 3 minutes.
  • Stir in white beans; continue cooking and stirring until pasta is perfectly cooked, another 4 or 5 minutes. Remove from heat and stir in grated cheese. Serve topped with grated cheese, if desired.

Steps:

  • In a large skillet, saute garlic, onion, carrot, parsley, basil and oregano in olive oil until onions are tender.
  • Add the tomatoes plus 1/4 cup of the can juices and the salt and pepper. Cover and stir frequently, simmering for 10 minutes or until vegetables are tender. Add the cannellini beans and cover. Simmer for 20 minutes.
  • Cook macaroni according to package directions, drain and toss with butter and Parmesan cheese. Add to cannellini bean mixture. Serve immediately with additional Parmesan cheese, if desired.

Steps:

  • Heat olive oil in a large saucepan over medium heat. Cook celery, onion, garlic, parsley, Italian seasoning, red pepper flakes, and salt in the hot oil until onion is translucent, about 5 minutes. Stir in chicken broth, tomatoes and tomato sauce, and simmer on low for 15 to 20 minutes.
  • Add pasta and cook 10 minutes, until pasta is tender.
  • Add undrained beans and mix well. Heat through. Serve with grated Parmesan cheese sprinkled on top.

  • Cover bottom of dutch oven or large pot with olive oil. Saute garlic in olive oil over medium high heat for 1 minute.
  • Add the onions, celery and carrots, stir a minute or two, then add the potatoes. Stir the potatoes to incorporate with the vegetables. Stir in the salt, pepper, rosemary and red pepper.
  • When the vegetables are glistening after a few minutes, pour in the broth. When the broth starts to simmer, add the tomato and beans. Simmer 20 minutes.
  • Scoop out 1 and 1/2 cup of the soft vegetables and blend in a blender or chopper, then re-add to the pot and stir. Simmer 10 minutes, stir a few times.
