Steps:

  • Preheat the oven to 350 degrees. Line muffin tins with paper liners.
  • Sift the flour, sugar, baking powder, baking soda, and salt into a large bowl and mix together. In a separate bowl, mix together the buttermilk, butter, lemon zest, and eggs. Make a hole in the center of the dry ingredients and pour the wet ingredients into the dry ingredients. Mix with a fork just until blended. Fold the blueberries into the batter. Don't over mix! With a standard (2 1/4-inch) ice-cream scoop or large spoon, scoop the batter into the prepared cups, filling them almost full.
  • Bake the muffins for 20 to 25 minutes, until golden brown.

3 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
4 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 cups buttermilk, shaken
1/4 pound (1 stick) unsalted butter, melted and cooled
1 1/2 teaspoons grated lemon zest
2 extra-large eggs, lightly beaten
2 cups fresh blueberries (2 half-pints)

TO DIE FOR BLUEBERRY MUFFINS

These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

SIGNATURE BLUEBERRY MUFFINS

OK, this is easy, and made with mixes. But it's the only way I could get the exact flavor of the blueberry muffins at a popular restaurant in Knoxville. I don't know that this is their recipe, it's just what I came up with after much trial and error trying to duplicate their muffins.

Steps:

  • Preheat oven to 400 degrees. Grease 12 muffin cups, or line with paper baking cups.
  • Stir together Jiffy mix, Bisquick, and sugar. Toss blueberries in the 2 tablespoons flour, then add to the dry ingredients and mix well, distributing evenly. Make a well in the center.
  • Pour egg and milk into the well, then combine quickly with the dry ingredients. Do not over mix. Let batter rest 3 or 4 minutes, then stir again before filling muffin cups.
  • Fill greased or paper-lined muffin cups 2/3 full. I recommend the greased tins, because these like to stick to the paper, for some reason. Bake at 400 degrees for 18-21 minutes, or until golden brown.

1 package(s) jiffy corn muffin mix
1 1/4 cup(s) bisquick baking mix
1/3 cup(s) sugar
1 - egg
2/3 cup(s) milk
1 1/4 cup(s) fresh or frozen blueberries (more or less)
2 tablespoon(s) flour

Combine the flour, baking powder and bicarb in a bowl with ¼ tsp fine salt, then tip this into the wet ingredients and stir in. Finally, fold in the blueberries and divide the mixture between the muffin cases.
  • Bake for 5 mins, then reduce oven to 180C/160C fan/gas 4 and bake for 15-18 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.
  • Cool in the tin for 10 mins, then carefully lift out onto a wire rack to finish cooling. Will keep for 3-4 days in an airtight container - after a day or two, pop them in the microwave for 10-15 secs on high to freshen up.

EASY BLUEBERRY MUFFINS I

These muffins are absolutely delicious. The secret is in NOT mixing the batter too much: the less you mix, the better the muffins are. You can replace the blueberries with chocolate chips to make an even better muffin--so my kids say.
