Steps:
- In large bowl, mix first 4 ingredients.
- Mix water and oil; add to flour mixture.
- Turn onto floured surface; knead for 2 minutes.
- Place in a greased bowl; turning to grease top.
- Cover and let rise for 20 minutes.
- Punch down; place on 12in, greased pizza pan.
- Pat into a circle.
- Topping: Mix first 5 ingredients and spread over crust.
- Put a few pepperoni slices on top of sauce.
- Sprinkle with 1/2 the mozzeralla; 1/2 the monterey jack, and 1/2 the parmesan.
- Put the rest of the pepperoni on.
- Repeat the cheese layer.
- Bake at 400* for 20 minutes or until light brown.
BASIC PIZZA DOUGH

Steps:
- Whisk 1 1/3 cups warm water (105 degrees F) and the sugar in a bowl; sprinkle the yeast on top. Set aside until foamy, about 10 minutes. Stir in the olive oil.
- Whisk the flour and salt in a large bowl. Make a well in the center of the flour and pour in the yeast mixture. Gradually stir with a wooden spoon to make a rough dough.
- Turn the dough out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes, dusting with more flour if necessary. Form into 2 balls. Brush 2 large bowls with olive oil, add a ball of dough to each and turn to coat with the oil. Cover tightly with plastic wrap and set aside at room temperature until doubled in size, about 1 hour, 30 minutes. Roll out and top as desired, or wrap in plastic wrap and freeze up to 1 month.

- To make your own base: Make up 300g bread mix following pack instructions. Don't rise or knead - just roll into a rough 30cm circle on a baking sheet. Or you can buy a ready-made pizza base from the supermarket. Top using suggestions below.
- To bake your pizza: Heat oven to 240C/220C fan/gas 8, add one of the toppings suggested below then bake for 15-20 mins until crisp.
- Ham, mushroom & rocket with pesto: Spread your base with the pesto. Top with ham, mushrooms, tomatoes and some seasoning. Bake as above then top with a handful of rocket.
- Spicy pepperoni & pepper: Spread your base with passata. Top with pepperoni, chilli, green pepper and mozzarella. Season, bake as above. Sprinkle with parsley.
- Italian goat's cheese & veggie special: Put spinach into a colander, pour over a kettle of boiling water to wilt, then squeeze out any excess. Spread base with pesto. Top with the spinach, cheese, olives and tomatoes. Season, then bake as above.
- Crispy bacon, artichoke & ricotta: Spread your base with ricotta. Scatter over artichokes, olives and bacon. Season and bake as above.
- Beef, basil, tomato & mozzarella: Fry mince with onion and garlic in olive oil over a high heat for 5 mins until browned. Spread passata over your base. Top with mince mixture, tomatoes and mozzarella. Season and bake as per above. Sprinkle with some basil leaves and serve.
QUICK BASIC PIZZA DOUGH

- Pour 1 1/2 cups warm water into a large bowl; sprinkle with yeast and let stand until foamy, about 5 minutes.
- Whisk sugar, oil, and salt into yeast mixture. Add flour and stir until a sticky dough forms. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour. Turn out onto a lightly floured surface and gently knead 1 or 2 times before using.
- Dough can be stored in an oiled bowl, covered with plastic, in refrigerator up to 2 hours. To freeze, wrap dough in plastic and freeze in a resealable freezer bag up to 3 months. If you plan to use it in a recipe that calls for half a batch, divide it before freezing.

- Add water, yeast, sugar, and salt to mixing bowl.
- Let sit 10 minutes. You should see bubbles of yeast (if not, you may have the wrong water temperature: start over).
- Mix in flour conservatively - don't add too much. After mixing it in, keep adding until dough is not wet looking and can be kneaded.
- Knead dough until smooth.
- Let rise at least 30 minutes (ideally 1 hour) at room temperature.
- Pre-heat oven to 475 degrees.
- Split dough into pieces (3-5 depending on size of pizza).
- Roll dough out each to the size of your pan (toss if desired to help reach appropriate size).
- Sprinkle corn meal onto each pan.
- Place dough onto pans, stretching or squeezing if necessary to fit properly.
- Spread some tomato sauce onto dough, leaving about an inch around the outside without sauce.
- Spread some cheese on top of the sauce.
- Add additional toppings as desired.
- Bake for 8-12 minutes, or until dough is fully cooked. The bottom of the pizza should be at least a little crispy.
