- In a large bowl, cream butter until light and fluffy. Beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency.
- Almond Buttercream Frosting : Substitute 1/2 to 3/4 teaspoon almond extract for the vanilla.
- Chocolate Buttercream Frosting : Reduce confectioners' sugar to 4 cups and add 1/2 cup baking cocoa; increase milk to 6-7 tablespoons.
- Lemon Buttercream Frosting : Substitute 5-6 tablespoons lemon juice for the milk; add 1 teaspoon grated lemon peel.
- Orange Buttercream Frosting : Substitute 5-6 tablespoons orange juice for the milk; add 1 teaspoon grated orange peel.

This works well with most types of cupcakes , use this to top chocolate cupcakes if your not a chocolate lover. I use vanilla bean paste for this recipie as it gives a better flavour and you have lovely black speckles in the frosting at the end . Double this recipie for a 20cm cake

- Beat the icing sugar and butter together in free standing electric mixer with a paddle attachment (or use a hand held electric whisk) on medium-slow speed until the mixture comes together and is well mixed.
- Turn the mixer down to speed.Combine the milk egg and vanilla bean paste/vanilla extract in a seperate bowl ,then add a couple of teaspoons at a time .
- Once all the milk has been incorperated, turn the mixer up to high speed.Continue beating until the frosting is light and fluffy , at least 5 minutes .The longer the frosting is beaten , the fluffier and lighter it becomes.
CREAMY VANILLA FROSTING
This is the recipe that I use for the Cut out frosted butter cookies. This recipe is also in the Best Foods of Christmas cookbook. I always double this recipe so we have plenty of frosting to go around for everyone to decorate. I also divide the frosting into thirds. I'll take one bowl of frosting and add red food coloring to make it pink and add peppermint extract. In another bowl of frosting I'll add green food coloring for green frosting. In the other bowl of frosting I keep it white for white frosting. YEAH now for the FUN part.

- In a medium-size saucepan, whisk the flour into the milk until smooth. Place over medium heat and, stirring constantly, cook until the mixture becomes very thick and begins to bubble, 10-15 minutes. My sister got this buttercream frosting off the box of a Sprinkles Cupcake mix, made famous by Oprah. My sister said this was amazing. Update: I have finally gotten around to making this myself.
