GREEK SCRAMBLED EGGS
Adapted from Mollie Katzen's Sunlight Cafe Cookboook. Lots of Greek flavors here! Try to use fresh herbs! Serve with some nice toasted whole grain bread and fresh fruit.

Steps:
- Break the eggs into a medium bowl and beat with a whisk until smooth. Stir in the herbs and scallion, and add in a good, amount of black pepper.
- Place a 10-inch sauté pan or skillet over medium heat. After 1-2 minutes, add the olive oil, wait about 10 seconds, then swirl to coat the pan. Turn the heat up to medium-high, add the spinach, and sauté for 2-3 minutes, or until the spinach has wilted and turned a deep green.
- With the heat at medium-high, pour the eggs into the pan, scrambling them slowly As eggs begin to set, push the curds from the bottom to one side, allowing uncooked egg to flow into the pan. The spinach will blend into the eggs.
- When the eggs are almost set but still slightly wet, sprinkle in the crumbled feta. Continue scrambling slowly, allowing the cheese to melt slightly into the eggs. After a minute, stir in the tomatoes.
- Cook for just a few seconds longer, or until the eggs are done to your liking. Serve immediately. Enjoy!

SIMPLE GREEK SCRAMBLED EGGS
I saw a recipe here for Greek Scrambled Eggs and wanted to make them at work, but realized I didn't have all the ingredients so I simplified it. These are a pretty good seller when I put them up on the Specials Board.

- In a small bowl beat eggs. Add green pepper, green onion and olives (if using).
- Heat pan and coat with cooking spray or coat with oil.
- Scramble fry eggs, season with greek seasoning, when almost done top with feta, I usually add a couple tablespoons of water and cover so the feta starts to melt.
- Serve with toast and or hashbrowns or even rice.
- When I first started making this I didn't have the greek seasoning, and you can use any color peppers. I think the olives are optional, mostly because I don't like them and I find people around here don't like them either.

SIMPLE SCRAMBLED EGGS
Slow and steady wins the race! Cooking over low heat ensures soft and luscious scrambled eggs. If you like, at the very end stir in 1/2 cup of your favorite shredded cheese, such as aged Cheddar or Gruyere.

- Lightly beat the eggs, 3/4 teaspoon salt and a few grinds of black pepper in a medium bowl.
- Melt 1 tablespoon of the butter in a medium nonstick skillet over low heat; swirl to coat the bottom and sides. Add the eggs, and cook slowly, scraping them up with a rubber spatula occasionally, until most of the liquid has thickened and the eggs are soft, about 10 minutes. (If you like your eggs a little firmer, cook them for an additional 2 to 3 minutes.) Remove them from the heat, and gently fold in the remaining 1 tablespoon of butter. Serve hot.
THE PROPER SCRAMBLED EGGS
Steps:
- Beat the eggs with the egg yolk in a bowl until smooth and evenly yellow.
- Put the beaten eggs in a small saucepot with the butter. Cook over medium heat, stirring the entire time with a spatula. The eggs should begin to thicken; transferring them on and off the heat will allow you to control the temperature, creating soft creamy eggs. When the eggs start to become thick and soupy, season with salt and pepper. Return to the heat and cook until desired doneness is achieved; if you'd like them cooked more, simply apply more heat.
- Mix in the sour cream and garnish with chives if using.
SIMPLE SCRAMBLED EGGS
This is a really easy recipe, but good for satisfying breakfast. Make sure not to use too much milk, or scrambled eggs will be runny

- In a small bowl, whisk all the eggs together, well. Set aside.
- Pour the milk, salt and butter in a small saucepan. Por the eggs in slowly.
- Cook on medium heat. After 5 minutes, mix the mixture. Wait another 2-3 minutes. Mix again. Scrambled eggs will start to form. Continue cooking and mixing until there is no or little runny eggs. If there is runny eggs, drain in the sink.
- Serve! Is good with toast, bacon or just by itself.

- Cut feta cheese into 1/2 inch chunks.
- Beat eggs with water, oregano and pepper to blend.
- Melt butter in a wide skillet with an ovenproof handle, over low heat.
- Pour in egg mixture. Cook, lifting cooked portion with a wide spatula to let the uncooked eggs flow underneath, until eggs are just softly set.

- Lop off a dime-size piece of the base of the tomato using a sharp knife. Grate the tomato from the base along the coarse side of an upright hand grater.
- In a 10-inch frying pan over medium heat, warm the olive oil and add the garlic. Cook for a minute or so, careful not to burn. Add the tomatoes. Cook them until all their water has cooked off and all that's left is thick pulp, about 10 minutes.
