These are a family favorite...quick, easy and tasty. As always this is a base recipe. I mix this up by sometimes adding garlic, onion, and cheese. Feel free to experiment.

  • In large frying pan, saute sausage and potatoes with onions until sausage no longer pink and potatoes slightly brown.
  • Preheat oven 350*.

  • First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown.   • Roast poblanos over gas stove burner or beneath broiler, turning frequently, until blistered and beginning to blacken in spots.   • When potatoes have cooked a total of 12 minutes, remove lid and stir pepper strips into potatoes. Add 1 cup heavy cream, stir and continue to cook over medium high heat, uncovered, until cream thickens 2-3 minutes.
  • Stir in cheese, remove from heat and cover.
  • Bake Taco Shells according to package directions until desired degree of crispness.
  • Spoon potatoes rajas into warm taco shells and serve.

  • Spray a 9 x 13 baking dish with cooking spray and pour in the potato sausage mixture. Sprinkle cubed cheese on top.
  • In a saucepan on top of the stove combine the milk, sour cream, butter, salt, pepper, garlic powder and flour. Over low heat melt the ingredients while stirring with a wire whisk until mixture thickens and is smooth. DO NOT BOIL.
  • Remove from stove and pour over potatoes and sausage. Sprinkle shredded cheddar cheese over top. Sprinkle paprika over cheese. Cover with foil and bake in preheated 375 degree oven 35 to 40 minutes or until potatoes are tender when stuck with a fork. Remove foil and bake for 15 more minutes until starts to brown on top. Remove from oven and garnish with fresh parsley.
