JUICY TWO-STAGE THANKSGIVING TURKEY MARINADE

This recipe has two different marinades that are started on Tuesday morning. This is a marinade recipe only, and makes a pre-Thanksgiving marinade for a juicy turkey with lots of flavor.

Juicy Two-Stage Thanksgiving Turkey Marinade image

Steps:

  • On the Tuesday morning before Thanksgiving, whisk together salt, orange juice, brown sugar, a cinnamon stick and water in a large nonreactive container with a cover, such as a large stainless steel stockpot. Stir until salt and sugar dissolve, about 5 minutes. Place the turkey into the brine, cover, and refrigerate overnight.
  • The next day, remove turkey from the first marinade, shake off excess, and pat the bird dry. Discard the brine. Clean the stockpot or brining container.
  • In the clean stockpot, make the marinade by stirring together together sliced oranges, sliced lemons, onion, green bell pepper, parsley, cloves, garlic powder, cinnamon sticks, paprika, olive oil, and pepper. Place the turkey into the stockpot and rub the marinade into the turkey. Cover and refrigerate overnight.
  • On Thanksgiving Day, remove turkey from the marinade and shake off the excess. Discard the remaining marinade. Roast the turkey using your favorite method.

ROASTED TURKEY DRUMSTICKS WITH STAR ANISE AND SOY SAUCE

Back in 2011, Melissa Clark revisited the turkey. "Just because we don't think to make it the star of a meal in May doesn't mean turkey won't taste as good as it did in November," she wrote. She took several approaches: cooking the parts separately, then braising them slowly; simmering ground turkey with pancetta for a ragù; and this one, where turkey drumsticks are coated in a mixture featuring soy sauce, honey and star anise, then cooked in a 400-degree oven. It's a worthy weekend meal, or one for a weekday when work gets out early. Pair it with white rice, to sop up the reserved marinade.

Roasted Turkey Drumsticks With Star Anise and Soy Sauce image

Steps:

  • In a small saucepan, combine 1/2 cup water, soy sauce, honey, sherry, scallions, ginger, star anise and garlic. Simmer over low heat for 10 minutes. Whisk in the oil. Reserve 1/4 cup of the marinade.
  • Line a large baking sheet with aluminum foil. Pat the drumsticks dry; season with salt and pepper and place on prepared pan. Brush turkey all over with half the remaining marinade (leave as much of the solids in the saucepan as possible). Scatter star anise over drumsticks (some will fall on baking pan, and that's fine). Marinate at room temperature for 30 minutes.
  • Heat the oven to 400 degrees. Roast drumsticks, turning and basting with more of the marinade occasionally, until an instant-read thermometer inserted in the thickest part of the meat registers 165 degrees, 1 to 1 1/2 hours. Drizzle with reserved marinade before serving.

Perfectly Paired Turkey Injection Marinade and Rub image

Steps:

  • Stir chicken broth, lemon juice, 1/2 cup melted butter, 1 clove garlic, mustard powder, and ginger together in a bowl. Cover bowl with plastic wrap and refrigerate marinade for flavors to blend, about 30 minutes.
  • Mix 1 cup softened butter, rosemary, thyme, and 2 cloves garlic together in a bowl until rub is evenly combined.
  • Separate skin from the meat of the turkey by running your hand under the skin to separate. Spoon rub mixture evenly under the skin in several different parts of the turkey.
  • Pour marinade into a meat injector and inject the meatiest parts of turkey with marinade, changing the angle of the needle several times.
  • Brush turkey with olive oil and season with salt and pepper; place in roasting pan and cover with plastic wrap. Refrigerate turkey for 12 to 24 hours.

Steps:

  • Rinse turkey well in cold water and pat very dry with paper towels.
  • Make the marinade: Combine garlic, cumin, salt and pepper in a large mixing bowl and mash the mixture together with the back of a kitchen spoon to make a kind of paste. Stir sour orange juice (or orange and lime juices) and oil into the paste and whisk to combine. Add oregano leaves and mix again. Reserve 1/2 cup of marinade and put aside.
  • Put turkey in a roasting pan that can fit in the refrigerator and cover with remaining marinade, making sure to get a lot of it into the turkey's open cavity. Cover and refrigerate overnight, or for at least a few hours. Baste a few times with marinade.
  • When ready to cook, heat oven to 450 degrees. Remove turkey from marinade and place on a clean cutting board. Discard marinade and clean roasting pan well. Return turkey to roasting pan, tuck the tips of the wings under the bird and shower it with salt and pepper. Place orange, lime and onion quarters in the turkey's cavity, then truss its legs together with cotton string. Roast turkey, uncovered, in the oven for 30 minutes.
  • Reduce oven heat to 325 degrees. Baste turkey with pan juices, and add remaining marinade to the pan. Continue roasting turkey, basting every 30 minutes and tenting it with foil if the skin is turning too dark, until an instant-read thermometer inserted into the thickest part of the thigh without touching bone registers 165 degrees, approximately 2 hours 45 minutes to 3 hours more. Transfer to a cutting board or platter and allow to rest at least 30 minutes before carving.
